    Wow! I made this for my husband and his family last night and they loved it! I was a little unsure of the croutons being soaked up with the chicken juices but they loved them and they were delish! Next time I think I will set the chickens on a rack so they bottom of the chicken can brown as much as possible since it got mushey sitting on the onions. I would also add a little more seasoning to the outside of the chicken. Overall it was delish! I also made the carmelized shallots and string beans and bells she made in this episode! These recipes are a keeper! Thanks Ina!

    I made this with two improvements. I added brussel sprouts half way through the cooking time. Also, I used sprouted wheat bagels from trader joes for the croutons. PERFECT croutons..crispy and better for you..I added them right to pan 10 min before chicken was done. One pan to clean up, and a complete meal. If you make ONE dish ..make it this one. Its easy and the house smells great. Thanks Ina! I hope you read this and try it my way!

    Ina, you just keep making my husband happier and happier at mealtime. The chicken was so tender and moist with wonderful flavors. Couldn't imagine that the c routons would be anywhere near as good as they were.

    I had never roasted a chicken until tonight and this recipe was fabulous! I couldn't get enough of the yummy croutons. The flavor was perfect. I served this with Ina's Herbed Roasted Onions recipe and it was a hit!!

    I love the simplicity of this roasted chicken and my kids kept going back for 2nds and 3rds...Good thing I made two! They were the juiciest chickens I have ever made. I think I did not add enough salt and pepper to them (the recipe leaves it up to you as to how much you want so I will put more next time and add maybe some garlic inside the cavity for added flavor (plus I just love garlic! I am thinking of making this a weekly meal for us! Thank you Ina!

    I made this dish (with a few alterations and my friends were so impressed. Thanks Ina!! I stuffed the chicken with the lemons, one cut head of garlic and fresh rosemary and cooked the chicken on top of celery stalks, carrots and onion. Before I put the chicken in the oven, I added white wine and chicken stock to the roasting plan and basted the chicken every 30 minutes.

    When the chicken was done, I sliced it all and laid it all over the croutons like Ina said. But then I made a gravy with the pan juices (straining out the fat and added a little more white wine (and a thickening agent. I poured all the gravy over the chicken and croutons. AMAZING!!

    I have been stuffing my chickens with lemons for a few years now and have loved the flavor but this was far superior. It is so deceptively simple but sublime! Croutons rather than potatoes or rice. who would have thought it? A perfect company dinner and I may even use it at holiday time. Keeps you out of the kitchen and with the action.
