We use olive oil but other than that - its perfect and its easy. I originally pulled this in 2010 for Lent but now, I make it often because of its quick cook and prep time. Definitely bring home some peasant bread to mop up the sauce after.

How much better can Barefoot Contessa get? Is Ina awesome or what?! This is so easy, flavorful and just a snap to put together -- perfect for a lunch at the beach -- love this! try Ina's coconut cake -- it pairs perfectly with this as a dessert! YUM!

I had bought theses big beautiful shrimps on the island at Folly Beach, SC and put them on dry ice and brought them home (12 hour trip to home and wanted something different and found this recipe. I was a little nervous at first, but it is so simple and yet WOW! what a wonderful, wonderful dish. I have left over linguine and will have it for lunch with garlic bread. This will be a keeper in my file and will try and make it often and will even be great for a nice supper with friends.

I've made this recipes several times and it has become one of our favorites. I must say there is so much flavor; this is a pasta dish that does not need any cheese. I use spaghetti and frozen shrimp with lots of garlic, lemon and fresh parsley. I defrost the shrimp, pat dry and just them warm up in the sauce, taking care not to overcook. Watch carefully, if the shrimp stays in the hot pan they continue cooking.
