My husband said I "knocked it out of the park". I think that means he liked it, a lot. First time I roasted a pork roast, first time I used fennel. It was great, I will use this recipe again.

What a wonderful meal. This dish always pleases everyone I serve it to. I love the fennel stuffing with pork. I used the pan drippings to make a wonderfully rich sauce. Thanks for this recipe Ina, it's 5 stars!!

At first I was worried about using Fennel. My husband is VERY picky. But it was a hit !! You don't get that licorish flavor.
I will definitely be making this again.

This was so delicious and easier than it looks! I followed the recipe exactly, but instead of traditional bread crumbs, I used store bought corn flake crumbs, as I am gluten intolerant. I didn't feel like I was missing out on anything! It was delicious and my whole family thought so too!

This is a very nice way to serve pork and the stuffing was a welcomed change from the ordinary.
Served with applesauce and a salad, it made for a great dinner.

I had some butterflied boneless pork chops that I used instead of a whole loin and it turned out really well. I think I'd rather have more vegetables in the stuffing but as a whole it was easy and very tasty
