I also followed the warming instructions and my potatoes were crisp. Perhaps the difference between soggy and crisp is a gas oven and not an electric? My husband also loved these potatoes with our steaks. Ina has a gas and so do I.

I followed these directions to the letter and all I got were soggy, floppy potatoes for my Valentine's dinner. I had to cook them to almost burned to get any crispness on these potatoes.
The only thing I can think I did wrong was I used a potato that was too starchy.
Normally I love Ina's recipes; too bad this one fell flat.

The fries were perfect when I took them out of the hot oil..slightly crispy on the outside and soft on the inside. I stuck them in oven to keep them warm as Ina did on her show, however this seemed to change the texture from slightly cripsy to flat out soggy! Even though I was disappointed with the end result, my husband thought they were fabulous.

Terrific recipe - Ina is a great chef. Those of us who like her are quite happy. If you don't want "matchstick fries" why are you rating it - go find a recipe for steak fries.

Thank you Ina. These are the best fries I've ever had!!!! Who know how easy it is!!!! I'm always on the prowl for good fries. No longer!!! One potato is plenty for 2 people!!! Very economical as well!!! Ina, you are the best!!! Keep coming into our homes!!!
Would love to see you do a book on dishes from countries you've been to, ie: England. Loved your book on Paris. THANKS AGAIN!!!

These are delicious...TRY THESE! Great as is, but Parmesan is a nice addition, too.
And I agree with Dot... PLEASE keep reviews to "recipe reviews" only! Why comment that these were bland, and then give it 5 stars? Also, what do you want Ina to say... "...this food looks average; it tastes okay; I could've done better...?" Her recipes taste great when I make it... I can only imagine how they are when she does... Go Ina!

did you notice how her fries on show looked like they were burned, this is simple and easy. I already new how to make. i would cut a little thicker to make like steak fries.

They're light, crispy and absolutely delicious. The key is keeping them warm in the oven while you finish preparing the meal which makes them really crispy. And Julia - perhaps you should stick to reviewing the recipe rather than Ina's choice of words. She and her recipes are the best!

just fabulous, how bad can that be?, just gorgeous, . I've never heard another chef go on as much as she does about how great her food is.
btw..theses potatoes were bland tasting.,
