I just about had a breakdown reading all these different theories on the oven temperature and times. I messed with the timing quite a bit and it still turned out Delicious -- so don't worry about messing this up. My worst fear was that it wouldn't set in the middle. I also had concerns about browning. So here's what I did: Baked at 450 for 10 minutes (not 15, then cooked at 225 for 1hr and 35 min (rather than 1 hr and 15 min. I also left the oven door closed for 15 minutes, then cracked open for 15 minutes before I removed it. THe cheesecake was perfect--not browned, set in the middle and delicious--better than restaurant cheesecake. My way is not necessarily the best way--who knows, it may have been fine if I had followed the directions exactly, the way many people did. I write this review to reassure people that it's OK to tweek the cooking times--you probably won't ruin it! Good luck!!!!

The baking directions seemed a little odd, but this is without a doubt the BEST cheesecake recipe I have ever made, and I have made quite a few. Absolutley perfect. I used gluted free graham crackers for the crust to accomodate guests that have that allergy, you will love this cheesecake!

Ina was right on when she said, "this has major wow factor." Before baking my cheesecake, I watched Ina's video and read several previous reviews. Everyone was confused about the temperature as the video suggests 350 degrees for the first 15 minutes while the written recipe suggests 450. Since I wasn't sure which temperature to use, I decided to use the average 400 degrees.

I baked the cheesecake at 400 degrees for the first 15 minutes. Then I followed the rest of the directions as written. My cheesecake was perfect delicious, had didn't crack. PERFECT!

I have used this recipe and modified it a few different ways like adding ripe mango's pureed for a fresh mango cheesecake, cocoa powder to half of the recipe and did a chocolate swirl great base recipe that you can do a lot with. No matter what way I modified it everyone fought over the last piece!!!!!

My family and guest we love this cheese cake. It's our tradition to have a thanksgiving in my house so I have been making it since last two years and hit every time I make it. I do cut down on the sugar and no sugar in a crust either and often use my own home made mix berry preserve (from bread maker machine so easy made few times already never had trouble Thank you SO SO SO SO much Ina. It's so nice to have you as a part of our family.
