    I'm definitely going to make this dessert again. It was easy to put together and perfect to prepare during the summer since there's no baking. I used the small, crisp chocolate chip cookies from Trader Joe's. The large container was enough for 5 layers. I didn't have Kahlua on hand, so I used 1/4 cup of brewed coffee and added a couple Tbsp. of rum. I also didn't want to buy espresso powder, so I put some ground coffee in some waxed paper and ground it finer by using a rolling pin. I saved quite a bit of money by not buying these two ingredients, and the results were delicious!

    SO FREAKING GOOD!!!!!! I made this for my brothers birthday and it was a HUGE hit. The cookie to cream ratio is perfect. I used the recommended cookies and after sitting in the fridge, the crispy cookies become softer and delicious! The taste of coffee in the cream is to die for. Overall one of my favorite desserts!

    Honesty, the prep time is only 10 minutes!! I've never submitted a review, but this one was so yum, easy, and able to be made Gluten-Free that I had to say something! I substituted 1/4 cup coffee instead of the liquer and espresso powder. I put everything in the mixer, and gathered my cookies and springform pan while it was whipping. Used a simple peeler for the chocolate shavings-simply georgeous!! And the best part??? I used Oreo cookies! The cream can be made and used for cappuccino topping, banana split topping, or just eaten with a spoon! To make it GF, just get GF cookies;

    Ina hit a home run with this one! I made this recipe for Independence Day, 2011. I also baked my own chocolate chip cookies which added to the freshness of the cake. This cake was extremely rich and delicious. I omitted the coffee elements from the recipe to meet the taste of everyone at the event. Wow! It was the hit of the party! Thank you, Ina!

    Comment for Chef Blue Daisy,
    I am going to make this cake this weekend (July 23rd/24th for a Birthday Cake. Since I don't want to go out and buy a whole bottle of Kahlua, I am going to use something I already have at home that I bought on a recent trip to Mexico ~ Cream of Tequila ~ which is comparable to Baileys Irish Cream and it is a very smooth liquor in spite of it being tequila. I would image you could substitute any type of a cream liquor. I will let you know how it turns out, I cannot wait to try this cake, especially with the hot weather most of us are experiencing! If you don't want to use any alcohol at all, perhaps a coffee flavored drink would be a good substitute.

    I made this cake for our dinner party last night... everyone loved it!! We used Nestles Tollhouse cookies and used chocolate chips on top instead of chocolate shaving... thought the chips partnered with the cookies inside. We also served each piece with a chocolate syrup drizzle on the plate. Again.. everyone LOVED it!! Thanks Ina for a delicous and easy recipe!! We love you!

    I cannot rate this recipe yet because I haven't tried it. Can someone please tell me if you can replace something with the Kahlua? Thank you

    I was so excited to use the springform cake pan I found in my husband's cupboard 3 years ago when we were first dating (I thought it was an odd thing to find in a bachalor's kitchen. I used homemade cookies (Alton Brown's "The Thin" chocolate chip cookie recipe and Melissa D'Arabian's "Mock Mascarpone". It was soooo good. I brought it to a family picnic and my whole family LOVED it! It's a fantastic dessert to make in the summer since there's no cooking involved, and it travels well. This was so rich and delicious, I will be maknig this again and again!
