I am making this recipe now to go along with the Chicken with 40 cloves. I got the recipe from her cook book. I was looking on line to get reviews before completing it and realized the recipes are different. My recipe has butternut squash, zucchini, carrots and onions in the couscous. Why would the recipe be different? Any reviews on the recipe in the book? Thanks I will write one when I am done. Hope it comes out good.

I made this the other night, it's so simple (as most Couscous recipes are. I added a little nutmeg, cinnamon, and ginger then stuff it in chicken breasts. It was perfect!

Perfect with Ina's Chicken with 40 Cloves of Garlic, great by itself. This has become a staple side dish in my house. Easy, fast and satisfying. I've substituted slivered almonds for the pine nuts when I forgot to restock. Just as good.

Flavorful and very quick to make, this is a great accompaniment to your main dish. A word of caution: Do not walk away from your pine nuts when you are toasting them. Mine burned, and boy, was I burned! I substituted - get this - peanuts, for the pine nuts, and it was still great. I HIGHLY RECOMMEND buying currants and using them in this dish - OK, they taste a lot like raisins, but they are small and sweet and don't give you that overwhelmingly "oh this is a raisin" taste. Fantastic, Ina. You my girl.

Added some dried cranberries to this. But it would have tasted wonderful even without that. I used store bought chicken stock. Still great! Thank you

I think this is a good start and was delicious and a compliment to home made chicken croquettes. I now want to experiment with different things and spices, as this is a great side dish and no one had ever had it before and all like it for its difference and uniqueness.

We had all but given up on couscous because, no matter how I prepared it, the couscous was always bland. The chicken stock pumps the flavor up so much! I used dried cranberries instead of currants. The couscous can be paired with almost any main dish. It's going to be my standby side dish from now on!!

Delicious, I couldnt' find currants or the nuts. Therefore I just substituted raisins and blanched, sliced almonds. delicius with the 40 clove chicken. Great balance!!

My family all loved this recipe! perfect with chicken that has a sauce to pour over it. I used craisins instead of currents.
