I will surely make it again, but will make a few changes.
    1. Less salt. Maybe none.
    2. More brocolli-- 2 1/2 cups or maybe even a little more
    3. More tarragon--maybe 3 tsp.

Probably the best chicken salad I have ever made.

Really great chicken salad. Although it does make a lot. I would cut it down by half if your not going to eat it all in the first day. The tomatoes release their moisture and the mustard does not have the same bite on the taste buds after it is in the refrig for a day.

I used seasoned boneless, skinless chicken breasts and a bit less dressing. The salad disappeared with everyone wnating more! The tarragon took it over the top! I will definitely use this recipe frequently.

This is quick and easy. I used chix broth to thin the mayo and it worked just fine. I also used leftover chix. Might be better fresh roasted but for a quick meal leftovers work great too !

    Melissa,

Chardonnay would be considered a dry white wine. Cooking wines might not be a good choice because you wouldn't want to drink those. They usually taste quite bitter. A "good" mayonnaise would be Hellman's or Kraft, something alone those lines. Walmart might carry both of these items.

I made the recipe as is, and I just love it! You can make the recipe to suit your taste though. I think next time I won't so much mustard; I will probably reduce the amount of dijon mustard. All in all, this is one of my fave recipes from my absolute favourite chef, INA!
