I've made this four times. The first time I didn't have vodka, so I used red wine, delicious. The second time I didn't have vodka so I used white wine, delicious, the third time I tried chicken broth, wonderful and the fourth time I used the vodka finally. Wonderful. All four versions have been flawless, crowd pleasers. It's a staple. I use half and freeze the rest for later. It freezes well. Thank you Ina for this simple yet professional recipe.

I was visiting my daughter in Atlanta (she doesn't cook and she asked me if I kenw how to make pink vodka sauce and I said "sure" (cause I do cook ;-
Ina is my "go to girl" for fabulous recipes and voila...I found this gem!
Cooking at my daughter's condo is like camping because she has very little kitchen gear. I had to roast the tomatoes in a 9x13 glass dish covered in foil.
I'm usually not one who likes oregano (or vodka for that matter so I didn't think I would like this recipe. Boy was I wrong! This recipe is "lick the bowl" good!!!!
We ate it two nights in a row it was THAT good. My daughter begged me to make another batch for her freezer. I wasn't 100% sure how it all would freeze so... I sauted the starter ingredients and roasted anther two cans of tomatoes and whipped it all in the blender. I froze this in small portions for her. She just mixes in heavy cream and Parm. cheese to taste while boiling the pasta and it works perfectly.
I've been thinking about this recipe ever since, went to get started yesterday and sadly found out we have no vodka. Can't make vodka sauce without vodka!
So I was at the liquor store at 9am this morning...we will have pink vodka sauce tonight...Can't wait!!! Many thanks to Ina...and Nick and Toni!!!!!

This is the best sauce ever. I bought Carmelina tomatoes at Whole Foods. It says product of Italy on the can. I also did not add all the cream, around 1 1/2 cups. Will make this over and over again.

Made this for my family and they loved it. Didn't put the red pepper flakes in cuz some people don't like things that are too spicy. I added some in on my own plate and it was delicious. Almost everyone went back for seconds. Found the recipe easy but a little time consuming. Will definitely be making it again

This recipe is absolutely delicious! Tried it last night - as per the recipe. I can see this going in many different directions...can't wait to try with shrimp. Definitely a staple in our kitchen from here on out!

I even messed up on one of the steps, and the dish still came out great! I was tired, and forgot to add the vodka to the onions. I had already put the onions and tomatoes together to go into the oven when I remembered, so I just added a little vodka at that stage and left it to roast in the oven. The vodka still cooked off in the oven and the result was a very concentrated tomato flavor. I was concerned that I didn't have enough liquid, so I did add a little water to help deglaze the baking dish before I pureed the whole thing.
Once I added the cream it all came together into a thick and rich sauce. I added some fresh basil instead of oregano.
I've made penne with vodka sauce many times using canned tomatoes but the roasting really does add another dimension and I will do it this way from now on, in the proper order!

I wondered what it would taste like with chicken. So I seared three thinly sliced boneless chicken breast in a skillet with olive oil and onions, fresh garlic and crushed red pepers. Then added it to the recipe and boy was it good!
