    My family loves this omelet. I didn't have bacon when I made it, but so what, it still turned out great. I love the Yukon Gold potatoes. They have such a nice buttery flavor. Thanks again, Ina.

    Easy & delicious! Great combination of flavors! Cooked it a bit longer than recipe called for, though, because eggs were not firm enough for me when I first checked it.

    I made this the other morning for my husband and me. Yum! So easy, quick, and delicious. I can't wait to make it again but do a larger version for a brunch with friends. I love finishing the omelet in the oven as it frees up the cooktop and allows me to do other things instead of babysitting the eggs. Thanks Ina! I think next time it's asparagus, goat cheese, spinach and sundried tomatoes as the main ingredients.

    After a weekend of BBQ I wanted something different for dinner and this omelet was perfect. I cut the potaotes in small cubes, then added 1 Tabsp olive oil to the butter to brown them. Also at the end when I added the grated cheese, I also included 1 fresh chopped tomato. It was so good, not a morsel was left.

    i love this recipe. you can change the vegetables, i also used mostly egg whites. great for brunch with houseguests. so quick and easy and delicious. i slip out of pan and cut into pie shapes with pizza cutter. looks great!

    I made this for Valentine's Day, along with Ina's blueberry coffee cake muffins. Everything was fabulous! The omelette has so much taste and was very easy. Thanks!

    This was a great recipe, especially for a special occasion. I made it on Christmas morning. It actually makes at least four portions, not two.

    A great breakfast! Truly filled up 2 big eaters including a couple bites for the begging dogs. Worked out great with the couple of substitutions I had to make.
