    Simple Goodness,can't ask for more!!! Next I will try shredding the cheese to put in egg mixture and add alittle more jalapeno. Used 6 eggs, didn't have XL eggs. My husband and I loved it for a Brunch dish. Had a quarter left for someone to eat tomorrow. Delicious!!!

    Delish!! It took me longer to cook than the recipe time indicates. I doubled the jalapeno and it is still not too spicy. Serves more than two, so I can heat leftovers quickly in the morning for a hot breakfast. While it is very good as written, I will play around with this in the future based on what I have on hand.

    A keeper! This was very good. I followed the directions precisely this first time with the exception of adding one egg [our eggs were small]. Next time I would probably cut back on the salt a bit and use thick-cut bacon. As noted by just about everyone, it could serve three or four easily.

    I baked it considerably longer than 20 minutes [I am somewhat neurotic about undercooked eggs]; I didn't see any puffing action until about 30 minutes.

    I fixed this on Sunday for me and my husband and did add some green pepper and ham to it but I gave this 5 stars we LOVED it!!!! and it was so easy to make!!!!

    Missing: a dash of chili. I tried this recipe yesterday for our neighbors. They loved it. I made it a bit more spicy for them and I used Buffalo meat instead. The children enjoyed it as well. My daughter said that it was too spicy and that it could probably burn off a birthmark. haha. I try to be hip and innovative with these recipes. We learned to eat spicier and more daring ingredients from our time spent in Phoenix, AZ. Sometimes my crazy recipes require medical attention afterwards. :-

    Everything you want in a savory breakfast. I prefer using shredded potatoes, such as hash brown style. Definitely not as dense as a frittata, but the same concept.

    Really good! As always, I had to tweak the recipe just a little. I added asparagus and ham to the omelet and used a pie dish instead of a skillet, as i'm a little wary of putting my pans in the oven. I also put the omelet in a bain-marie so it wouldn't dry out; I think it worked well keeping the eggs moist. I also served fried potatoes alongside instead of inside the omelet (just fills up the plate a little more. Thanks for another great recipe, Ina.

    I prefer this baking method over the traditional pan fried omelet. I didn't have jalapenos or cheese and I added some chili powder. It was still great!
