    Very tasty....but isn't this really a frittata? BTW, I have also had success using diced turkey pepperoni slowly sauteed in olive oil along with diced onion and red bell pepper until the onion and the pepper soft and tender.
    BTW, I usually rate down if the recipe is not complete and this recipe does not specify the size of the dice that you use for your Yukon Golds. What do you recommend? Too fine a dice will yield a sticky, gooey potato mass, IMO!

    For anyone who has ever been afraid to make an omelet--this is YOUR recipe! It's easy and very delicious. Make it once following the recipe, then imagine all the variations that are available--this is just as good for lunch or a late supper as for breakfast.

    This was SOOOOO delicious! I didn't have jalapenos so I threw in a can of hot green chilies. I will be making this over and over!

    I rate this 5 stars....although my fifth star won't stay on my rating!! I knew I'd love it when I saw Ina prepare it on tv. I'm a big brunch fan and this is perfect! I've changed it up using sausage and to save time and add a little more flavor I have used frozed southern O'brien hashbrowns and they worked just as well. Great recipe!!
