    Another winner! This couldn't have been easier! I saw this on her show yesterday and just couldn't get it off my mind. I like my eggs done and I find when I get an omelet in a restaurant that the eggs are still runny. Never thought of baking the omelet, but it was total perfection! This would make a wonderful quick light dinner with a small salad on the side. It just couldn't have been easier! Ina, you rock!

    Awesome recipe! Could not get enough of it. And also very easy and fast. I will probably try adding another jalapeno next time, because I could not taste any spice with just one. Still yummy, though!

    The first time I made this for my family it was an instant hit. I have changed it up here and there to make it my own. Thanks Ina for getting the base down for me. I wouldn't have thought to do an omelet like this. I have changed the type of meat I use. I put smoked keilbasa in instead of bacon. The smokiness gives it more flavor. I also changed the fresh jalapeno to pickled jalapenos. Though I like fresh ingredients the fresh peppers didn't give the dish enough spice for our taste.

    I haven't instructed my wife to make this for me yet, but when I saw that the Barefoot Delicatessen used Extra-Sharp Cheddar cheese, I knew right off it would be good. So based upon my love for my wife (who cooks like the Barefoot, and strong cheddar, I have given this and the Barefoot 5 stars.

    I recently made this for my Mom's birthday. She said it was "one of the best you have made." Very simple recipe...I had to alter it for our taste and the ingrediants on hand, still worked out perfect!

    I have made this recipe with my eight-year-old several times and it's wonderful. Things to know:

    - This is very filing, we can get three or four servings from it easily.

    -Depending on your oven, may need to cook this a few minutes longer.

    -This is great for cleaning out the fridge or using up produce from your garden. We do a variation on this with leftover cooked spinach, mushrooms and gruyere cheese plus the potato from the basic recipe. Yummy! Play around with it. Don't leave out the cubed cheese because it creates pockets of cheesy goodness in the final product -- but you can vary the type of cheese.

    -Great for cooking with kids since there are so many kid safe steps like mixing the eggs, prepping the cheese, adding the spices, etc..

    I followed this recipe and it really was delicious. I cannot wait to try it with other meat and cheese options. Personally, I would lessen the salt (as both the bacon and cheese are quite salty and also use a little less cheese (maybe 3 oz instead of 4 just to make it more healthy!
