    I was very careful to follow the directions exactly. The extra minute resulted in a "too cooked" event. Next time I will remove from the oven while I still see a little bubbling. I can think of many things to do with this. Thank you Ina

    Wow, this was great. The only change I made was reducing the eggs from 5 to 4. Definitely more than enough for two (my hubby and I split one-half of it, saved the other half for the next day. Don't skip on the jalapeno, it really adds flavor. Will definitely be making again!

    Loved the bacon flavor, and the potato was delicious throughout. This was very tasty and filling. Even better when eaten with salsa. Thanks Ina! :D

    I wasn't a fan of this recipe at all. It was far too bland and the time it took me to cook wasn't worth the "quality" or lack of. I was very disappointed, I will not be making this again. I will just go to IHOP....the omelets are better, cheaper, and quicker.

    This was great! I had several people over for breakfast. Doubled the recipe. I put green peppers in instead of the Jalepenos. Everyone loved it! I even had suggestions that this would make a great evening meal. Thanks Ina!!

    This omlet is delicious and more than enough for two! I did not use bacon but added about a cup of frozen spinach, and also substituted leeks for the green onions because I didn't have any. I think this is a great recipe that can be varied in many ways.

    I made this for Valentine's Day breakfast and it was delicious! It was fairly simple to prepare and cooked perfectly in the oven. I found that 17 minutes was the perfect amount of time - the eggs were still fluffy in the center and not overcooked at all. The combination of flavors was so good, and I will definitely be making this again soon!
