I made this for a pot-luck and it seemed to be a hit. I substituted cubed red potatoes for the eggplant because I am not a fan. I also thought it was a little tart, I am going to play around with the dressing but I would definately make it again. The veggies smelled so good when they were roasting that I wasn't sure I could keep my family away long enough to make the salad.

I have never tried her recipe but this looked like healthy and delicious dish. However, I thought it was a little too greasy and felt guilty eating it. Next time, I'll try to roast vegetables with less or no oil and try mixing in different vegetables such as zucchini, asparagus and mushrooms.

This is one of the best side dish recipes I have ever come across. Everyone absolutely loves it. It's incredibly easy to prepare. It tastes even better if made ahead of time.

My mom made this recipe for my baby shower and it was a hit. Everyone was asking for the recipe. She even made it in advance and let it sit before serving. Great!

I made this recipe for a family gathering. This recipe is the third or fourth of Ina's that has hit the "WOW-ometer" at 10 and climbing. The whole kit and kaboodle loved the flavor, which is hard to do with 11 people ! One addition I made, because I am addicted to lemon, is add the zest of one lemon to the dressing. We were having another family celebration and I made this salad. Though there were some leftovers (which if you can get them are even better the next day, they didn't quite make it through the evening. Once one person got into them, another toddled over and then another. So . . . As you you can see, it has become a family favorite.
I can't wait to serve it to my two best friends who are both vegetarians. I know they will absolutely love it !

Ina your the best!......This recipe was great, just bursting with flavor in my mouth. I would recommend this recipe to my vegetarian friends and those that are on the low carb revolution......Ina I want to be on your show, so I can just learn from the best!

This recipe is fantastic! It works as a main course or side dish. It's great for vegetarian friends. It makes a great leftover. Most important....it's really easy.

This is why Ina Garten is so darn good. This dish is super quick, super easy, super tasty. Experiment and roast whatever vegetables you have on hand. The important thing to do is add the vinegrette to the orzo while the orzo is hot. Highly rec. this recipe.
