    to cdorigan. I make these brownies a lot. Never have they come out greasy. I wonder how much butter you are using to grease your pan,you just need a light coating,or use a non stick pan and no butter. Also is your butter fresh and of a good quality? Yes use fresh baking powder. As a matter of fact all your baking ingredients should be of the highest quality and fresh.I wonder if the chips you used added to the greasy bottom.May I also suggest testing the temperature of your oven. Just because your dial says 325 doesnt mean it is.When I make these brownies i really splurge on good quality ingrdients. Good luck

    Ok, I make all of Ina's recipes, and am a true devotee... but seriously, three times now I've made these and each time they have the "greasy" problem others have mentioned. So, any of you really experienced bakers?? The bottom of all the brownies (each time have butter that appears to have pooled and hardened. Lovely. And they are definitely crumbly... cooked it a minute shy of total time, and they didn't seem overdone at all. Could it be my baking powder? Its a bit old... but otherwise I dont understand! I've made it exactly as the recipe calls, and with variations wihtout nuts but with mixed choc chips instead. But each time, hardened buttery mess on the bottom! Arrrghh. Glutton for punishment I guess, have to find another recipe.

    These brownies are so decadent. Very good, and very different from anything out of a box. On Saturday movie nights at my house, I dish out these brownies, add a scoop of vanilla ice cream, and enjoy with a hot mug of coffee. Really cannot get better than that.

    This is absolutely the best Brownie recipe! I actually use a shot of espresso instead of the granules and this only enhances the chocolate, you cannot taste the coffee. As well, make sure you get the best quality chocolate you can afford. Chocolate is the star here, so your brownies will be as good as the chocolate you use.

    First time doing this recipe and the outcome was perfect. Amazing with a nice, cold scoop of vanilla ice cream and a drizzle of left over melted chocolate on top. They won over my sister's out-of-the-box brownies which I thought were tough to beat, 'till now. The only adjustment I'll have for next time is maybe a little less sugar or chocolate in the actual batter. After a few minutes of eating, they became way too sweet of taste for me and my family. Other than that, this is a must-do brownie recipe!

    Mmmmm. Delicious. My nephew who was eating these looked like he was in heaven. And my niece who hardly eats ANYTHING ate two of them!

    These were a hit at the table. I served them for a nice big brownie-themed breakfast with a big pitcher of milk.

    The house smelled so good! Everyone got so hungry waiting for them. We didn't wait for them to cool thoroughly. We just jumped right in!

    I've made these brownies a number of times. The first time, I followed the recipe verbatum. I wasn't keen on the amount of coffee in them so the 2nd time I made them I used about 1/2 the coffee and it was still a bit much for me and my friends. The 3rd time I made them I omitted the coffee altogether and added white chocolate chunks as well as the dark chocolate chips and walnuts. The 4th time I put raisins in them with the walnuts and those were amazing. This last time I grated in the rind of 1 orange, used 3 tablespoons of cocoa powder instead of the coffee and put in bashed up dried banana chips as well as the chocolate chips and walnuts ... I'm just waiting for them to cool enough to cut them ..... Thanks Ina .. these are amazing brownies no matter what additions you put in ...
