don't get the name! I think Oven Fried Chicken is baked, not fried....so this is really Fried Chicken that you put in the oven afterwards to cook through.....it was delicious...but I will stick to my own fried chicken routine

This is good but what's the point of the oven baking? I mean, if you're going to fry it in the beginning anyways, you might as well finish it that way. It's more authentic fried chicken. I was looking for a Baked/oven fried chicken for less fat, but the way this recipe is, it is far from that. SO, I broiled mine in the beginning instead of frying and then finished it off in the oven. It had a crispy coating and tasted great! Not as good as authentic southern fried chicken I grew up with, but a close second!

Johns@allstate, did you let the chicken sit on a rack for a minute before frying? Anytime you either pan fry or deep fry, need to let the flour have a few minutes to sit on the meat before putting in the hot oil. Learned that the hard way with pork chops--not pretty. Great recipes as always Ina.

Would just like to comment regarding the two process cooking of this oven-fried chicken. Yes,you do fry first and then finish in the oven and yes, that does make for more dirty pots and pans and utensils but the upside of the two process cooking is that you get that wonderful crunch of fried chicken but you don't have to be standing at the stove frying chicken as family/friends are gathered at the table. Hope this helps to clarify as to why this two step process cooking does indeed make excellent sense.

You can fry and roast in the same pan if you have the right one.
This is fabulous! I wish people wouldn't rate recipes until they've tried them--you know "don't knock it until you've tried it" or even better they change the recipe and then give it a low rating--LOL!

How can one call this oven-fried chicken, when you have to fry it in oil first. So you still have the mess of oil frying,and then dirtying another kitchen utensil to roast in the oven. This just doesn't make sense to me. Otherwise, I love 95% of Ina's recipes.
