The panna cotta itself was delicious, lovely and smooth. It was also super easy, though the overnight refrigeration is a drawback. I did try one after only a few hours, though, and it was still delicious- it just wasn't as firm as it needed to be. More like a pudding.

I don't like balsamic or strawberries, so for a tart component I experimented with citrus supremes. I cut little wedges out of lime, lemon and orange, tossed it lightly in sugar, and topped the panna cotta with it. The best by far was the lime- it gave a tangy bite that perfectly balanced out the smooth sweetness of the panna cotta. I would highly recommend it!

Made this last night for my dad birthday dinner... he had panna cotta for the first time at a restuarnat and then asked me to make it for him... Super simple and easy and it was much more elegant than cake.. Only bummer is the vanilla bean cost 14.00. Thanks Ina!

The panna cotta was delicious, but I didn't care for the balsamic strawberries. I think plain, fresh fruit with this panna cotta would be perfect.

Oh Ina! Your hubby was right, this is one of the best desserts I've ever had! I would nominate you for a Nobel Peace Prize if I could. I make this often and it ALWAYS impresses without fail. There are not many things in the world better than this.

Absolutely delicious! After making this the first time for my family, I decided to take it to a work potluck. I prepared the panna cotta in a casserole dish and then took the strawberries in a bowl for people to put over their panna cotta. Everyone raved over it. This second method was easier, and though not as elegant looking in serving, it still tasted delicious.

I have a number of panna cotta recipes due to the popularity of the first one I made (sorry, Ina not yours and Ina's is my favorite but my guests preferred the one I served first. The balamic strawberries topping was stunning. I would suggest to the the critique of being too tart...try reducing the balsamic vinegar as it really sweetens the flavor. I always keep a bottle of reduced balsamic vinegar in my kitchen, Caution re reducing, stir constantly until beginning to thicken...and do not look away as it will burn in a heartbeat.
