This is by far the best split pea soup recipe. I don't care for the crunchier peas, so I add all my peas at the beginning and cook them all the way through. It's so good by itself or with bacon, ham or a ham hock.

This is a definite "do over" in our house. I did do a few things differently. I used bacon grease (in stead of EVOO to cook the onions, garlic, and oregano to give it a meaty flavor. I also had to cook it the 2nd time closer to an hour to get the peas tender. We also served Smoked Sausage (cut and sauteed on top as well as some baked cheese toast. It was so yummy and my husband really liked it (which is saying a lot.

I had some leftover ham, and it was a cold, rainy day, so I decided to make split pea and ham soup. I found this recipe, and as I always love Ina's recipes, I decided to try it and just add ham. My husband said that a mix would be better than making it from scratch since it took so long, so I was determined to prove him wrong. One bite, and he was eating his words, so to speak. He loved it, and even ate the last bowlful a couple days later without asking me if I wanted any!
I will say that I didn't wait as long to add the second batch of peas- just too impatient to be done. I also just used a potato masher at the end to mash some of the peas and potatoes- I didn't want a puree, but I did want a thicker texture. Worked perfectly. The ham was a nice addition, too.

My husband requested split pea soup since we had leftover ham from easter. When I searched for it, of course I picked Ina's recipe since her quality is so consistent. I've never been disapointed in her recipes. I added diced ham with the rest of the peas for the second cooking and we both just loved the rich flavor of the broth and it was so easy to make. Another go to recipe. Also, since I have all of Ina's cookbooks, it's much easier to find the recipe online and then I know which cookbook to find recipes in.

I prepared this soup exactly as written, and I think it's very delicious. The seasoning quantities are perfect. I like the "chunky" quality of the finished soup...much better than the "baby food" quality of most split pea soup recipes.
By the way, I'm not sure why some messages complain that the peas aren't fully cooked after 80 minutes total. The 1/2# used at the beginning turn to a puree, and the other 1/2# (added half way through have a nice, "al dente" texture.

I thought this was excellent. SImple and healthy. I did think that more peas could go in at the beginning (maybe 3/4 and less half way through. But really this is to personal preference.

Gabriela, if you want it smoother then, yes, do blend it but be careful to do it very slowly because it can become too smooth. If you are like me you don't want it to be like baby food. When I blend it I don't do the entire pot at once just in case it becomes too smooth. Remember we always make it our own :-D
Enjoy!

Ina you rock!
This recipe is perfect just the way it is. I suggest everyone to make this exactly as is. If a 2nd time you want to add ham or bacon, do so, but this is incredibly delicious on its own. You did it again Ina!
