This was my first time using a receipe from food network, and all I can say, is that this was a FABULOUS dinner. I really enjoyed the juciness of the chicken and the contrast of the lemon vinaigrette was pure delicious. It was also very easy to make, just follow the directions. Also, don't forget to POUND THAT CHICKEN! I missed that step on the first two breast and ended up putting them in the oven - btw, they still turned out delicious! I totally recommend this recipe!!! Thanks to who ever posted this! - Beth

This was absolutely awesome! Very easy, and very quick. The only change I made was to add a tiny pinch of sugar to the vinagrette, and I sprinkled some parmesean cheese onto the salad before serving on top the chicken. My whole family, including my 9 and 11 year old kid's, loved this! Will definately make again. Thanks Ina!

Delicious! I didn't have the flavored bread crumbs so I used organic panko crumbs and added Italian seasonings. Instead of the greens on top, I just served a side salad as my husband loves salads with lots of veggies. I also served it with angel hair noodles and homemade Alfredo sauce (heavy cream, butter, Parmesan cheese, and pepper. My husband and company loved it!

Thank you to kristykay for suggesting to leave the chicken in the oven until ready to serve. I cooked different sizes of chicken breasts and as each one finished, they got moved down to the oven while the other ones finished cooking. When it was time to serve, they were all hot and none were overdone.

This is my favorite chicken recipe. It is good enough for a mystery guest. I have to be careful not to make it too often or people (not me will get tired of it. The only thing I do that is not in the recipe is to coat the chicken at least an hour before and to let the coating become more secure in the refrigerator on a rack until time to cook. An extra step, but it saves the cook from having to do everything at the last minute. Good suggestions to try here, too.

This recipe needed absolutely no alterations! It is fairly simple to make and everyone that I have made it for has thoroughly enjoyed it. When I make this recipe for my children and their friends, I usually cut the pounded chicken into strips and follow all of the steps, according to the recipe, to create parmesan chicken strips. These chicken strips make great dippers and the kids usually ask for seconds. Great recipe overall!!

This is probably my favorite meal of all time. I buy and use thinly sliced chicken breast. This eliminates pounding the chicken. It is less meat, but also less time. I also top with Spinach. Delish!
