    Elegant and delicious! The lemon dressing on the spicy arugula is the perfect compliment to the comforting chicken. I used the perdue individually wrapped breasts and pounded them on the outside of their already packaged plastic. Worked great. My daughter loves to help press the chicken into the toppings. Fun, light, healthy! Thank you!

    Finally made this dish last night after several years of having it saved in my recipe box. I followed the recipe to the letter and it was delicious. There was more than enough coating/wash for three good-sized breast halves (about 1.5 lbs.. The dressing IS tart, so you definitely need to be a lemon lover. But we also had a simple Parmesan orzo as a side and drizzled the dressing over everything so it was nicely balanced. Will absolutely make again. Thanks Ina!!

    This was DELICIOUS, light, fresh. Loved the salad greens with the chicken. I did find the dressing a little tart, so I added about 1 tbsp honey and a little mayo to make it a little creamier. Everyone, ages 13-50, loved it!

    This recipe is delicious! I don't know how you can have enough crumb/cheese mixture for 6 chicken breasts though. I used three flattened breasts and barely had enough to coat all three. Next time I'll increase the amount of crumb/cheese mixture. I did use Romano cheese as I like it better than Parmesan, for the cost as well as flavor. I liked the dressing very much as well. I will be making this many times I'm sure. Thanks Ina ! You have never disappointed me!!!

    Iv probably use this recipe once a week and im still enamored by it!! I found a type of italian bread crumbs from the grocery Fresh Market (its their brand of breadcrumbs. DELICIOUS!!!! the italian breadcrumbs has a hint of sweetness to it, and paired with the saltiness of the salad dressing served on top...perfection!

    I made this dish last night and got great reviews from my husband and daughter. Just like a couple of reviews said, it took some extra time to pound out the chicken breasts and do the 3-step coating process. Next time I'll try pounding the chicken ahead of time, and refrigerate between sheets of wax paper. I used plain panko breadcrumbs instead and seasoned with dried oregano and basil. I'll increase the ratio of grated Parmigiano Reggiano to crumbs because my daughter, a cheese lover, still couldn't taste the cheese. Also, I'll try adding garlic powder to the crumbs next time. Definitely pound the chicken til it's thin and use medium low heat. The final result for me was tender chicken with a light crunchy coating that needed a little extra flavor. I definitely will make this again soon!
