This recipe yields PERFECTLY breaded, crispy chicken breasts. I made the salad separate instead of placing it on top of the chicken, and I found that the chicken was lacking enough flavor. I'll use this recipe again, but maybe next time I'll melt parmesan cheese on top or add sauce.

My entire family LOVES this dish. It makes great left-overs too. I would not change a thing. I even use this chicken to make Chicken Parmigana. Yum.

My youngest daughter is the pickiest eater on the planet, and she loved this dish. The only thing I will change when making it again is to lower the amount of olive oil in the vinaigrette. Even with greens for 6, it was just too oily/heavy for us. Nonetheless, we loved this dish and it is sure to become a "regular dish" in our household.

Very delicious! I forgot to pound the chicken but it still tasted great. There were plenty of the flour, egg, and bread crumbs mixtures, so next time I'll buy more chicken. It was so easy to make!

Sooooooo Tasty!! I'm flashing a huge thumbs up sign right now! I loved it. Prior to this, I was making a really good Tyler Florence recipe for chicken parm with tomato sauce and mozarella... But there was something so delicate, light, simple, crispy and flavorful about this recipe that makes it better!!

The only problem I had was I cooked this for three minutes on each side over medium heat and it was still pink in the middle, had to microwave it for another minute or two.

I didn't make the salad with the lemon vinegrette but I'm sure it only makes it better with that added crunch. I served this with Paula Deen's Baked spaghetti.

I'm definitely going to make this one again and again! Ina Gartens style of cooking has totally won me over. Yum.

To respond to the comment below, I've also made the Beattys Chocolate cake - Twice. What a chocolate cake, deep and rich with that hint of coffee flavor. When I made it, it was gone in two days.

Absolutely delicious. The vinagrette on top of the salad atop the chicken is delicious. I paired the chicken with some angel hair pasta with a little bit of olive oil, and crab cakes with tarter sauce for the appetizer. For desert i made Ina's Beatty's Chocolate Cake and it is the absolute best cake ever. Very moist and perfectly delicious!!!

This chicken is so good, and light. I used a purchased garlic parm dressing to save time. Also, it took me more like an hour start to finish but will make again.
