Parmesan Roasted Asparagus

Ingredients
  • 2 1/2 pounds fresh asparagus (about 30 large)
  • 2 tablespoons good olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup freshly grated Parmesan
  • 2 lemons cut in wedges, for serving

Preheat the oven to 400 degrees F.

If the stalks of the asparagus are thick, peel the bottom 1/2 of each. Lay them in a single layer on a sheet pan and drizzle with olive oil. Sprinkle with salt and pepper. Roast for 15 to 20 minutes, until tender. Sprinkle with the Parmesan and return to the oven for another minute. Serve with lemon wedges.

I don't know WHERE they got the picture of the asparagus, but it's not even close to what it's supposed to look like. There is no cream sauce here! That being said, this is a simple and delicious way to roast asparagus. I used freshly grated Parmesan and I think it does make a difference. Yes, food network does need to change the picture, but if you've ever cooked before and you read the recipe you should know that melted parm does not become creamy. I love this recipe!! I only gave this 4 stars because I wanted the aspargus in the picture. I was making Ina's Chicken and Mushroom Lasagna with a white bechamel sauce. What I did was make a little extra sauce and add the parmesean cheese to the sauce and poured it over the aspargus like the picture and topped with a little papricka. I have a difficult time trying to figure out different ways to prepare vegetables. I saw this recipe and decided to give it a try. The oven roasted asparagus was absolutely wonderful! The asparagus was tender crisp, full of flavor and a light coating of fresh parmesan cheese really complimented the dish perfectly. The reason I looked at this recipe was for the picture otherwise anyone can put olive oil and parmesan cheese. That's not much of a recipe. I'm sure it's a hollandaise sauce or something. I think this is a really good recipe, but I compared it with another method of cooking the asparagus and the other method tasted much better.
