Parmesan Roasted Asparagus

Ingredients
  • 2 1/2 pounds fresh asparagus (about 30 large)
  • 2 tablespoons good olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup freshly grated Parmesan
  • 2 lemons cut in wedges, for serving
Directions

Preheat the oven to 400 degrees F.

If the stalks of the asparagus are thick, peel the bottom 1/2 of each. Lay them in a single layer on a sheet pan and drizzle with olive oil. Sprinkle with salt and pepper. Roast for 15 to 20 minutes, until tender. Sprinkle with the Parmesan and return to the oven for another minute. Serve with lemon wedges.

    I never had asparagus growing up so I really never bought or prepared it for my family. I found this recipe and decided to try it. WOW! It was so good I ate them all...lol My family loved them. It's a wonderful accompaniment to a hamburger patty or the finest cut of meat, chicken or fish. Don't be afraid to try it. You'll be glad you did. Ina, do you have a good recipe for brussels sprouts...YUCK!!!
    This is the only way I cook asparagus! Its so yummy and a staple side dish for our prime rib xmas dinner!
    Growing up I never had asparagus, as an adult, I found how absolutely yummy it is at restaurants. I tried this recipe for my family and it is "the bomb" as they say. It has fast become the family favorite with steak and quiche.

    These were great! Mine didn't look like Ina's, how she has what looks like a sauce, but it is probably because I used the bottled parmesan rather than freshly grated, but it was still delicious!
    I don't know WHERE they got the picture of the asparagus, but it's not even close to what it's supposed to look like. There is no cream sauce here! That being said, this is a simple and delicious way to roast asparagus. I used freshly grated Parmesan and I think it does make a difference. And, never throw away the rind - it's delicious added to most soups. Yum!
    Cooked it for 20 and it was wonderful, but I think it was a bit long. Next time, I'll likely cook it more towards 15 minutes than 20.
    I have made this so many times! My friends and family request it anytime they come over for dinner. It's so easy, too!

    Yes, food network does need to change the picture, but if you've ever cooked before and you read the recipe you should know that melted parm does not become creamy. I love this recipe!! The only thing I changed was that I made my own garlic paste and spread over the asparagus during the roasting process. Love, Love, Loved it!!!!
    I roast asparagus all the time, and make my cauliflower this way.....Never thought to do it to the asparagus! Added a little Panko breadcrumbs to the cheese before sprinkling....AWESOME. For those who thought it would look like the picture.....REALLY??
    The picture of this prepared recipe has a sauce over it, but the recipe does not include a sauce, only sprinkled cheese. Misleading.

    The recipe is good!...however, you're showing the wrong picture...that one belongs to another Ina's recipe called "Roasted Asparagus with Hollandaise"
    Delicious! Although, my dish didn't look like the photo, it did not disappoint. Adding the cheese makes this dish slightly heavy. It's best served with lemony salmon and fluffy white rice.
    I'm not a big asparagus fan so I came to this website to find an interesting recipe. This one was delicious. I ate every last bite!
    Loved it! I took it to a family party and my mom and sister wanted the recipe.
    I only gave this 4 stars because I wanted the aspargus in the picture. I was making Ina's Chicken and Mushroom Lasagna with a white bechamel sauce. What I did was make a little extra sauce and add the parmesean cheese to the sauce and poured it over the aspargus like the picture and topped with a little papricka. It was fantastic and a great compliment to her other recipe.
    I made this with Alex G's (Alex's day off) recipe for mustard crusted pork loin. Great dishes! Thank you Ina.
    I have a difficult time trying to figure out different ways to prepare vegetables. I saw this recipe and decided to give it a try. The oven roasted asparagus was absolutely wonderful! The asparagus was tender crisp, full of flavor and a light coating of fresh parmesan cheese really complimented the dish perfectly. I will be searching for more of Ina's recipes for oven roasted vegetables. Love her shows.
     

     
    FYI...I served this dish with Kentucky Hot Browns and an orange cranberry relish. Perfect!!
    I usually don't like asparagus much, but this recipe made me love it! It's very simple and delicious. I made it with Rachael Ray's Parmesan Crusted Chicken, it was a delicious meal.
    I made this recipe for my husband and his response was "I can eat this everyday." I also made it for my in-laws who called me when they got home to ask for the recipe. Ina is great!!!!
    Normally the thought of asparagus makes me sick but i found myself able to eat (and help myself to seconds of) these. Even without the parmesan theyre quite amazing. I will be cooking my asparagus like this from now on. highly recomended!
    I make this all the time. It is simple and delicious, with or without the parmesan cheese. We practically eat them like they're french fries!
    This was the best -- BEST -- way I have ever had asparagus. Don't despair, it isn't supposed to look like the picture. You should shred fresh Parmesan and sprinkle that on top....YUMMY!!! The whole family LOVED it!
    I wish FN would chage the picture, however, this recipe is awesome! So easy and so good. My kids loved it too.
