    INA IS JUST AN INCREDIBLY TALENTED AND CARING CHEF AND ALL HER RECIPES SHOW HER LOVE OF FOOD AND ATTENTION TO DETAIL. THIS IS ANOTHER KEEPER. THANKS TO ALL THE PREVIOUS REVIEWERS, I DID TAKE YOUR ADVICE. MY PEACHES WERE REALLY SWEET AND SO RIPE THAT THEY PRACTICALLY PEELED THEMSELVES ....SO RIPE THAT IT WAS 'JUICE CITY' IN THE BOWL. I ADDED 1/4 C. OF INSTANT TAPIOCA AND LET IT SIT AT LEAST 15 MINUTES...ADDED EVEN MORE PEACHES AND USED A PINT OF BLUEBERRIES AND ADDED SOME CINNAMON AND FRESH NUTMEG. ALSO, USED BOTH ORANGE AND LEMON ZEST, BUT TASTED IT AS I WENT ALONG. I WANTED TO ENHANCE THE FRUIT - AND IT WORKED!

    I MADE THE TOPPING (THREW IT ALL IN THE PROCESSOR THE DAY BEFORE AND REFRIGERATED IT - GREAT TIME SAVER! THE TOPPING WAS IN THESE BIG CHUNKS..I CRUMBLED THEM JUST A BIT AND LEFT LOTS OF BIG (INCH HIGH CHUNKS SCATTERED OVER THE FILLING . I HAD SOME LEFT OVER.

    I USED A SLOTTED SPOON TO PUT THE FILLING IN THE BUTTERED PAN AND LEFT OUT A FULL CUP OF JUICE. (I REALLY SHOULD HAVE MADE THIS TWO DAYS BEFORE I DID, BECAUSE THEN THE PEACHES WERE THE PERFECT RIPENESS...AT THIS POINT THEY WERE JUST BEGGING ME TO BAKE THEM!

    PUT ALL ON A ALUMINUM FOILED BAKING SHEET.
    MY FRUIT FILLING HELD TOGETHER REALLY WELL AND CUTTING BACK ON THE SUGARS WAS THE THING TO DO WITH THESE LUSHLY SWEET PEACHES. THE BLUEBERRIES ARE WONDERFUL IN THIS AND - LIKE EVERYONE SAYS - THE TOPPING IS JUST THE BEST. I ADMIT IT..I USED ALL THAT BUTTER AND IT COULD NOT HAVE BEEN BETTER. LEAVING IT IN CHUNKS WAS JUST THE RIGHT DECADENT TOUCH. CANNOT WAIT TO SHARE THIS WITH MY FRIENDS AND FAMILY. WISH I COULD GIVE THIS 10 STARS!

    Although I am a huge Ina fan I have made this recipe twice and each time the filling presentation is lacking. Tastes good and the topping is great but needs to look good too for company, seems silly I know but I won't make this again.

    I made this for my parents and they loved it, although I think it needed more of a salty element because it was sooo sweet! And if you're not a huge orange-goer I'd recommend only using half of the orange. Overall this was a huge hit and I will definitely make it again!

    The only peaches at the store were still very hard (so hard I had to have my boyfriend slice them but after the crisp was cooked, they were tart, which was a delicious combination with the sweet raspberries.

    I really enjoyed this crisp EXCEPT for the orange zest. I put in quite a bit less than the full orange, and it still overpowered all the other flavors, entirely. It was disappointing. I recommend it without any zest.

    since it's winter, i used 3 bags of good frozen peaches, thawed, and fresh raspberries - i also added 1 small bag of english walnut pieces to the topping - the entire family adored it and we're already looking forward to trying different fruits

    Since it is wintertime I substituted pears and canned sour cherries (used ginger instead of zest and it was wonderful!

    This crisp is sooooo good. If you love a lot of crisp this is the recipe for you. Make sure you use real good peaches to get the best flavor. Thanks Ina:
