I liked the taste of the custard a lot...very velvety and you could really taste the sweetness of the pear brandy. However, make sure to slice your pears very thinly...I made the mistake of cutting them fairly chunky and some hadn't cooked through well enough. The slightly harder texture of the undercooked pears didn't mix well with the smooth and silky texture of the custard. I will definitely try this again with thinner pear slices for Thanksgiving...might as well use up the Pear Brandy I searched high and low to find. And it definitely still tastes good refrigerated!

Such an easy recipe and you get such an elegant result. We tried it with pears, but think we would like it more with apples. I could not find pear brandy so we used regular brandy and we still enjoyed it very much.

Ina really hit gold with this recipe. It was easy to prepare and smelled wonderful. My liquor store only had very expensive pear brandy but it was so worth it. I highly recommend this clafouti.
