    the chicken was delicious, but 90 minutes was FAR too long for the poor vegetables. my husband enjoyed them as they were crispy like french fries. If I do it again I would only roast the veggies for the last 30-40 min!

    OMG....the BEST Roast Chicken I've ever made and my mother in law was even praising on how good the chicken was all night, I think that says enough there!! I followed the recipe exactly except I did not use fennel, I cooked the chicken on 365 degree's and I added about 3/4 cup of water to the bottom of the pan to prevent burning and it also allowed me to use the juices to make home made gravy for my dinner. The carrots and onions were so absolutely delicious, everyone ate them right up and when I make it again I will at least double or triple them so everyone can have more second's and I can have leftovers. I love all of Ina's recipes and I swear by all of her cookbooks. I love how she keeps everything simple and fresh, but more importantly, absolutely delicious!!!

    This was one of the best roasted chickens I've ever eaten. I did tweak it just a little mostly due to what I had on hand: I added rosemary, deleted the carrots, and added potatoes. I didn't tie the legs or do any of that business. And for those of you who wonder lid on or off, after reading debates over this online, I kept the lid on, and the skin was a crispy wonder.

    I followed this to the letter and my vegetables burnt. My oven is generally pretty accurate so I don't know why but I see by reading the reviews that this is common. I wish I'd read the reviews prior so I would have paid more attention. Thank goodness I made a vegetable side dish.

    Very good. Used carrots, cremini mushrooms and onions, sprinkled lightly with fennel seeds which made them awesome (not big on fresh fennel. Also used rosemary and thyme. Simple, easy dish but not blow me away like some of her dishes. I save my 5 stars for things that are out of this world.

    I'm an inexperienced cook and this was my first time making a whole chicken. This recipe was super easy and turned out absolutely PERFECT! When I put the veggies in I added celery and potatoes and also a little water to prevent burning on the bottom, and I would highly recommend that. They cook very well with this and help the meal feed a few more.
