    It's just roast chicken. How can it be that good?

    It is. That good.
    I'm not a huge fan of roasted chicken. It's fine. When it was what my mother had cooked for dinner, i remember an ungrateful eye-roll and pang of disappointment. Maybe it's because I'm approaching middle age now, or maybe it's Ina Garten's recipe (ya think?, but this roast chicken is unreal. I'm not a fan of fennel, but I did follow this to a T, and it was so worth it. The fennel isn't overpowering, and it blends well with the carrots and onions. The chicken itself is juicy and so flavorful, it makes me feel like a well trained chef. So easy and such an easy weekly staple to make. Plus, your house will smell AMAZING.
    UPDATE: In Ina's video she puts the vegetables back in the oven to caramelize for a bit more. Stock up on the vegetables (I add little potatoes and celery now because they're unreal.

    Amazing, this is one of the all-time easiest recipes I've ever used! It completely demystified roasting a whole chicken. I followed the recipe almost exactly, I just didn't have fennel, and the chicken came out with golden crispy skin and tender, juicy meat; it was beautiful. I can't wait to make it again! With fennel. If you're in the mood for chicken, this is your recipe!

    my husband generally hates my cooking. this is the ONLY thing I make that he raves about, other than my lasagna. so I make it about twice a week. I don't do the veggies because my husband doesn't eat veggies, but the chicken turns out perfect and tasty. I broil the chicken at 450F for about 10 min at the end (usually setting off my fire alarm! to make the skin nice and crispy. great recipe.

    This was my first time roasting a whole chicken, and WOW! Mine was 5 lb exactly, and needed about 80 min to cook. For the vegetables I used parsnips, carrots, onions, and yukon gold potatoes. I recommend using Ina's "engagement chicken" recipe to make a sauce on the stove, after the chicken/vegetables are cooked. Add crusty bread and a glass of chardonnay...perfection! I would definitely serve this for company!

    This is such an amazing recipe!!! Went on to find a good roast chicken recipe and of course this one popped up. I love Ina and I love making all her stuff so I was happy to see her attach to this recipe. I used everything in the recipe except the fennel and the thyme (my family aren't big on ingredients like that. The grocery store didn't have a yellow onion, which was strange, so i just bought a red onion which i thought we delicious anyway. Let's just say in the past week, I've made this twice... it's THAT GOOD. YOU HAVE TO MAKE THIS!

    This chicken was delicious! First time I ever roasted a chicken, and it turned out perfectly! I poured a little olive oil in the cavity of the chicken, and some extra over the top. Browned perfectly and moist throughout.

    AMAZING! I've made this three times already in less than 2 months (once for a dinner party. I'm not much of a cook, but this was very easy to make. The veggies were absolutely delicious. I realize now that I forgot to pour olive oil and thyme over them, but they were still super flavorful. And I had never had fennel before this, but I loved it! And I usually don't like carrots, but these were so yummy...almost as good as the very juicy chicken! I'm definitely recommending this to everyone I know!

    This was the most delicious roasted chicken I've ever eaten! Crispy outside, moist inside, a hint of the lemon and garlic. I used fresh rosemary instead of thyme, because it grows outside my door. Couldn't have been easier to prepare, but is definitely company worthy! Thanks, Ina
