    this is a staple in my home. so easy and so delicious.
    works with a 3-4 lb chicken as well - just use a little less thyme and and cook it about 10 minutes less. I don't use the fennel but I add carrots and potatoes. fantastic and moist - you don't even need the gravy.
    if you are roasting for an hour and a half, I recommend adding the veggies in the last hour so they don't get too burnt.

    I made this several times and they turned out perfect each time. I microwave the lemon so the temp. in the cavity isn't so cold when the chicken starts to roast. I usually take the garlic gloves out and mash them into the gravy I make with the pan drippings. So yummy ;

    This recipe says medium difficulty, but it is really very simple. This chicken turns out beautifully and people rave over it every time I make it. Little effort and hard to mess this one up!

    I've never made a roasted chicken and this looked easy to do and it was. It came out perfectly and the leftovers were very tasty!

    Absolutely fantastic every time we make this. I used this recipe the first time to tried to roast a chicken, and it is foolproof. My boyfriend and I love Ina, and this recipe is no exception.

    This was easy and delicious. My husband who soes not eat veggies loved the roasted carrots, onions and fennel. I threw in string beans they were well done but yummy!

    When a cook/chef describes a dish as "fabulous", "Best Ever" or "Perfect" the bar has been set pretty high. Ina's "Perfect" roast chicken surpasses that bar. It is quite frankly the best I have ever had, and there have been many! The lemon, garlic and thyme "stuffing" combined with the vegetable choice (particularly the fennel made for an extraordinary dish. I used red onions, which I prefer, rather than yellow, and they were delicious. Brava!
