I've made roast chicken before, but never had one stays as moist, juicy, and flavorful as this one! I live alone, so this chicken lasted for many meals. It was as wonderful on the last day as it was on the first! Thanks Ina, for a welcome addition to my recipe file!

I have been searching for a long long time to find the perfect roast chicken. My husband loves roast chicken that his mother use to make. I came across this recipe and made it for him and he fell in LOVE with it. IT is so mosit and juicy... PERFECT chicken. We have this every sunday night.

I have tried several of Ina's recipes and I love them all but this one is so good I actually registered to the food network just so I can review it. My husband A VERY PICKY EATER ate two servings!!!, and the next day I made chicken salad and then chicken soup with the leftovers, he ate everything!, Delicious. If you are worried about the chicken tasting like butter don't, it tastes perfect!, I was worried about the butter cuz hubby doesn't like it, thank you Ina, Thank you, thank you , thank you!.

Make sure lots of olive oil in the veggies so they dont cook to the pan.

I love this recipe, I added a few red bliss potatoes to the roasting pan and they turned out very well.

Loved the simplicity of stuffing it all into the chicken. Kind of missing flavor in the actual meat though. LOVED the veggies....I used red potatos and fresh green beans! Big hit!
