    I made this on Sunday and it was incredible! I had never used fennel before as I tend to shy away from anything that tastes of licorice. It added a whole different dimension to the sauce. The infusion of the lemon and garlic flavors has to be the best part of this recipe. I've taken a sandwich to work each day this week and I doubt that I will ever get tired of tasting this roast chicken. Thanks, Ina!!!

    Ina, Bless You! I found this recipe in your original Barefoot Contessa cookbook and it quickly became my family's Friday Night favorite. It's perfect every time and certainly deserves the title of "Perfect Roast Chicken"! This year, I made 4 birds simultaneously for 17 people for the Jewish New Year, it was a smashing success. And, we made the best chicken salad with the leftovers (what little there was. In general, I thank you for demystifying difficult recipess (although this one is not difficult with inspiring dishes that are as simple as they are delicious! For anyone reading this, you cannot go wrong with the Perfect Roast Chicken, your house will smell fantastic and your family will think you're genious!

    Delicious! Easy to prepare. My hudband thought it was almost like Thanksgiving. I made the potatos as well and also made a gravy from the chicken drippings.

    This was a great dinner. I made a gravey with the dripping with a little flour and water. I didn't use the leeks but did use carrotts and onoins. I straind the juices from the chicken and veggies then added the flour mixer to it and adjusted the seasoning. was great over rice. The chicken was great moist and tender. Will be a staple at my house. Thanks

    The chicken was juicy, flavorful, and simple to make. It just fell off the bone when we went to slice it.
    Nobody at my house really cared for the fennel bulb. Next time I will leave them out.

    I loved the flavors in the chicken and especially in the vegetables, but next time I will put everything on a rack. The vegies were just too imersed in fat and I had a Rocky Chicken!

    Wow! My wife, son and I all agree that this was the pinnacle of roast chicken. It was easy to prepare and the entire house was filled with the most wonderful smells. This is a dish that you can serve to any guest anytime.
