    The best roast chicken ever, moist everytime, my husband and m-i-l love this. I have made it many times and everytime is perfect. For this reason I have bought 3 of her books so far, and every recipe I try is great. My work cant get enough of those lemon bars!!! Keep the recipes coming Ina they are homey and in most cases very easy too make.

    This was so easy and so good. I made a few variations based on what I had in the house and it was still great. Instead of using thyme, I used fresh Rosemary. And, for the veggies, I used carrots, onions, zuchini, and red potatoes. It was yummy. Next time I make this, I will definitely try it with thyme (although I am partial to Rosemary and the fennnel.

    The chicken was delicious - moist and tender with a lovely presentation. The lemon flavor was pleasantly evident, although the fresh flavor of the garlic was suprisingly absent. It was my first time to use fennel. The raw fennel shockingly smelled like licorice, but the cooked fennel resulted in a totally different taste -a wonderful and mellow vegetable like nothing else to compare. Yum! My recommendation would be to add the vegetables after the first 30-45 minutes of cooking as the full 1 1/2 hours needed for the large chicken resulted in overcooked vegetables. Otherwise, it was a yummy Sunday dinner!

    This was very easy and delicious! The flavors of the herbs and veggies combine for a wonderful flavor. The next time I make it I will add more veggies.

    Chicken was very good. Veggies too mushy and onions burned on the bottom of the pan. This doesn't call for any liquid.

    This is great for casual family dining or entertaining. My whole family enjoyed all the flavors. The chicken was very moist and tender. Yum Yum

    I will definitely make this again - very moist and full of flavor. Good way to make use of fresh thyme from my garden. The leftovermeat and juice also tasted wonderful over rice.
