made this tonight as written, but couldnt find a chicken as big as the recipe called for. it was so good! the chicken was so moist and flavorful. i especially liked the vegetables. the first time tasting fennel, and it was delicious. made with a side of garlic roasted potatoes. will definitly make again!

Initially, I was skeptical about roasting a chicken at 425 degrees but after trying this recipe (twice now along with the potato recipe, I'm convinced this is the ONLY way to roast a chicken. Both recipes are stunning.

I made this for myself and a neighbor yesterday and it was simply fantastic. My neighbor also raved about it - left me voice mail message then came over looking for me to tell me how great it was and wanted the recipe. Wonderful, wonderful.

I have NEVER tasted roast chicken like this! It was so moist and had the best flavor. So easy too.

I watched the show with my daughter and she asked me to make this dish. I made it the next day and barely had any leftovers. This was by far the best roasted chicken that I've ever made. My kids could not get enough, and my husband, who is by far the pickiest, ate it up. This dish is so beautiful when presented that I'm sure I'll make it for any company that I want to impress. This beyond a doubt is the best chicken I have every had. It was so tender and moist, and especially easy to cut. Everyone loved it, especially with the veggies.
