I watched the show with my daughter and she asked me to make this dish. I made it the next day and barely had any leftovers. This was by far the best roasted chicken that I've ever made. My kids could not get enough, and my husband, who is by far the pickiest, ate it up. This dish is so beautiful when presented that I'm sure I'll make it for any company that I want to impress. This beyond a doubt is the best chicken I have every had. It was so tender and moist, and especially easy to cut. Everyone loved it, especially with the veggies.

I have tried to find the perfect roast chicken for quite some time now and this recipe deserves the title. I first tried it as a dinner to follow a football game and have used it to also serve as dinner for a celebration in a more formal atmosphere. That's what I love about it... it's simple and versatile. I always use the fennel if I am making this chicken for a special occasion, but I have used celery instead on more casual occasions. And the best part is it's all in one pan, so cleanup is even easy!

I've roasted a lot of chickens in my kitchen but this one reigns supreme. It's easy and the skin is so beautiful. No tricks, no brining, no oven temperature changes, just an easy straightforward recipe with yummy results. My family demolished it!

This is now my favorite roast chicken recipe. I had never cooked with fennel before, we loved it. Moist & delicious. The garlic potatoes are a keeper too!!!
