I have easily made 300 roast chickens over the course of my life. I have NEVER EVER EVER made one that was this good! The skin was fabulous. The meat was beyond tender. The smell was amazing. Wonderful recipe!

Put this in the oven on 425 and left the house for the entire cooking time, keeping my fingers crossed that I wouldn't come home to a crispy chicken. When I walked in the door, to smell was wonderful. I took it out of the oven--beautilly browned. I through together a quick gravy and the meal was delish. The only changes I made was I added pototoes and I added about two cups of water to the pan because I was going to be gone during the whole cooking process.

This was amazing! I had a 3lb chicken...did it at 375F for the 1.5 hrs with foil tenting for 20 minutes after. It was great. I added red small potatoes (cut into fourths and mushrooms to the vegetable mix and salted them a bit, which I don't think I needed to but they came out good regardless. OH and with all the reviews and the fact that my oven has a mind of it's own, I layered two broil pans on top of each other and added a splash of beer and olive oil to the veggie mix then topped it off with the chicken. The vegetables were perfectly roasted. A little charred and lovely.
I did add butter under the skin of the bird and on top. My beau HATES chicken and he loved this!! I was floored. This is worth it...and if you know your equipment/company and need small adjustments...figure it out but stay as close to the recipe as you can! Ina this was wonderful...three little girls and a picky steak man devoured it!

This is exactly the method Julia Child would have used to roast a chicken, and I did so today in honor of what would have been her 100 birthday. Moist, delicious...couldn't be better.

This is a great roasted chicken. Very easy recipe, simple ingredients with excellent results. I love Ina Garten's recipes and so far, haven't had a bad result yet, with any of them. Not sure what one of the reviewers issue was with this chicken? If you listened to them you would have thought you were eating poison! it is not bland nor is it disgusting tasting. I think they need to stick to their own roasted chicken recipe and leave this one to the cooks that can appreciate good flavor.

Guys...it's so good. I added potatoes, and they got all soft and carmelized and wonderful. As others have said, I was a bit skeptical - how great could it be with such simple seasonings? The answer is really great.

This was delicious! It was so tasty that it won't serve 8 of the people at my dinner table! If I had more than six people I think I would get another chicken. I will never roast chicken any other way.
