ina has done it again. this thanksgiving i decided to make two small (12lb. turkeys instead of one huge one. i wanted to make one on the weds. before. wanted something easy but good. went online to food network. put in roast turkey. amny recipes came up, however when i saw inas name, the time, and reviews, i went to the recipe. only read it once, printed it, and made it. i have made over 20 thanksgiving turkeys, and this was by far the best, easiest, and moistest. i followed the recipe to the letter, and it was fantastic. crispy, brown skin, with moist delicious meat. even my neighbors said they could smell it form outside. it's that good! don't even look mfor another recipe. ina i love you! you are the best!

This was not my first run at making a Thanksgiving meal. I made this for Thanksgiving dinner yesterday and it was amazing. The turkey was flavorful, moist and the skin was beautifully golden crisp. In addition to Ina's recipe I added a few touches of my own. First, I had a 16pd. bird, second I used sage butter to season underneath the skin of the breast and both the inside cavity and outside of the bird. Thirdly, I used good olive oil to coat the bird all over as butter tends to burn quick. Last but not least I also used about a cup of whisky (alcohol burns off as an additional baste. This one is definitely making it into my recipe collection.

I love this recipe. Super easy to do and wonderfully delicious. The tangy lemon went very well with the sweet cranberry sauce! Excellent recipe for my first turkey!!!

This is a perfect example of "simpler is better." The turkey was absolutely perfect. My complaint is the gravy -- with all the lemon juice and zest -- was a little sour. Some of my guests liked it, some agreed it was a little sour. I think it's a great recipe and perhaps I'll just switch from mashed potatoes to something like a potato gratin that doesn't ask for gravy.

I've only cooked a handful of turkeys in my life.. But this one.. ROCKS! This will be my recipe every special event from now on!! Wowowow!
Mind you.. the drippings will be very fatty! I had to skin about 2 cups of fat...

My only problem with Turkey is.. even if my cooking time should be 4 hours.. I end up having to cook longer! I Cooked my turkey for 6 hours! LOL! It's a 17lb turkey.. supposed to be cooked around 4 1/4 hrs.. but mine didn't seem cooked.. So, I kept cooking.. Anyway, it stayed moist anyways.. :

I am a huge fan of Ina's and I love her recipes! This was my 1st Turkey and it was a huge success! I only made a couple of changes - I used a frozen turkey. an oven bag, and I placed onions, celery, and a few garlic cloves underneath the turkey in the bag.
The turkey was so flavorful and juicy! The drippings made a wonderful addition to Ina's Homemade Gravy!!! I would highly recommend this to anyone!

This turkey came out absolutely fabulous. As a first time turkey cooker I was afraid I'd ruin the turkey, but by following this recipe it came out delicious. All the guest raved about it, even those who don't " like" turkey. This is a great recipe and I definitely plan on using this recipe again next year.

As one can tell by the comments, this is truly an awesome recipe. It is amazing that such an easy recipe can result in such a moist and delicious turkey. I used this last year and will again this year (and sending it to my daughter to try on her first bird!

We had the first of many Thanksgiving celebrations at my house Saturday and I was frazzled thinking about making my first turkey but I used this recipe and it was great!!! It was super moist and just a hint of lemon.. I was not able to find fresh thyme so I used dried for the butter and omitted it for the inside but it was still so good!!!!!! I even over cooked it just a tad and it was still awesome!!!!! Cannot tell you how proud I was to have this recipe!!!

I love this recipe but I frequently can't find fresh thyme either. I subtitute with Sage or Rosemary. Rosemary is pretty strong so use spariingly. Sage is classic seasoning for turkey. Enjoy!
