Thank you, Ina, for the wonderful (as always recipe! I made it with only two differences from the original recipe: I used thyme that I had dried from my little summer yard garden instead of fresh thyme, and I switched a lime for the lemon. I'm not fond of lemon -- it seems to always become the predominant flavor of every dish it finds its way into, and I wanted to taste the turkey, not the lemon. It was perfect with the lime. All my guests commented on how moist and flavorful even the breast meat was. The breast darkened considerably before the cooking was complete, so I covered it with a little piece of aluminum foil to protect it a bit. I thought it was perfect, as did every one of my guests. This will be my go-to turkey recipe in the future!

So juicy, we love this. I also added an apple and orange in the cavity. Instead of butter on the skin, I slather all of my turkeys with mayonnaise then salt and pepper. I roast uncovered (no bag for 2 1/2 hrs till the temp is 165. I do not make the potatoes and carrots.

I tried this recipe for a party in November 2011 and loved it so much that I used it for our own Thanksgiving feast. Even my college-girl daughters loved it and used the leftovers for sandwiches, and asked for more! I've done two full-sized turkeys since then and I used the ingredients for two roasted turkey breasts as well, just cutting down on the measures a bit. My daughter in law used the same recipe for the holidays, too, and it has become our traditional turkey. Don't be afraid of this recipe--Ina's solution is wonderfully aromatic and lets the turkey shine. The flavors don't "stick out" so that it's too garlicky or too herbal. The garlic, thyme and lemon are all complimentary flavors to the bird, and the butter just adds moistness and that wonderful brown crust! I have not had one imperfect roast out of 5, and it takes only a few very un-messy minutes to prepare!! How easy is that?

I made this for Thanksgiving 2011 and it was so perfect, we didn't have leftovers. I read a tip about flipping the turkey over about 1/2 way through the cooking process and it made a huge difference.

I wonder if I did something wrong because this turkey was just like any other turkey that I've ever made. It wasn't any moister than it ever is, and it didn't taste like any of the ingredients that were on it or in it!?! I even made sure that I could cooked the turkey to an internal temperature of 165 degrees. Oh well. I think I'm done with turkeys for a while. :(

Wonderful! We decided the night of Thanksgiving to give it a go and since none of us had ever cooked a turkey before I turned to Ina. She hasn't let me down yet! By far the best turkey I've ever tasted and turned out literally picture perfect.

There's no need to panic with this recipe; it is the easiest one I've ever come across and each time I make it, the turkey turns out moist and delicious. I also add oranges (like I've seen Giada De Laurentiies do along with the lemoms, which is great too!

My first attempt at baking a turkey despite being in my 40s( my husband always fries them and I have now cooked four birds in the last two months using this recipe and everyone has raved about them. I don't eat meat so I cannot personally judge the flavor, but they look beautiful and my family and friends love it! I think this is the perfect recipe for everyone.
