    Unfortunately, I was disappointed with the outcome. It came out tasty, but the time of cooking lasted 3 hours for an 11 pounds turkey with oven at 350 F. Even after 3 hours, when the timer poped up, the back was not cooked enough, since it sits on the rack. I cut off a wing, and it was red at the joint. I had to turn the turkey upside down to roast the back for another 1/2 hr., and this overkooked the breast.
    So, it came out a kind of dry. The other thing that the recipe doesn't deal with is the lack of chicken broth on the roasting pan.
    I poured in a can of chicken broth at the begining of cooking, and still it dried out after a half of hour or so. I put in another can, and didn't lasted long, and then I used water to wet the pan. I may have used a couple of more cans of water. And still
    all the juices were burned out at the end of cooking.
    I think that Contessa should revise the recipe to avoid the above shortcomings.

    I made this last year and it was fantastic. I don't recall do I need to cover the turkey while in the oven? The recipe does not state. thanks

    First time cooking a turkey so I knew I had to go to by girl Ina. And she didn't let me down! I bought a 14 lb. turkey so I adjusted the cooking time. It only took 3 hrs. Was planning on 3 1/2 but I tested it with my termometer right where Ina told me to and it was 172• I was worried I over cooked it but I didn't. It was so juicy and delicious!!! I am surprised this recipe hasn't had more reviews/likes! I like Ina because I didn't need a lot of ingredients to make an awesome turkey. "back to basics" thanks Ina...you rock!

    I made this Turkey for Thanksgiving & it was perfect Moist & flavorful. The Thyme & Lemon give it a classic Turkey flavor that is just PERFECT!!! Thanks Ina!

    Loved this way of roasting turkey. All the flavors you stuff inside the turkey just infuse themselves into the turkey. This is a similar method to her Perfect Roast chicken recipe which is also just what it says - perfect. She stuffs her roast chicken with a whole head of garlic instead of a Spanish Onion. Yum...

    I also used the brining technique and ingredients from Alton Brown's Good Eats Roast Turkey which helped make the meat really moist!


    Ina IS an amazing teacher and I have absolutely fallen in love with her flavorful and elegant cuisine....I have made so many of her recipes I can't even count...

    This is the best turkey I ever ate, it was so juicy, delicious and easy to make. Thank you, Ina, you are my favourite Chef on Food Network, and I watch your show all the time. I have learned so much from you and other Chefs on Food Network. Thanks again..
