Issued a spur-of-the-moment invite for dessert/coffee after seeing this episode. It was fabulous and everyone LOVED it. I also just cooked syrum to a warm amber color and used slightly firmer plums. It was a bit juicy, but no complaints from anyone and zero problem getting it out of the pie plate. I did remember to put it on a baking sheet. Hate cleaning the oven. Definitely will make again.

I made this for afew of my friends and they all wanted my recipe,I told them to watch the contessa every day and make some of her dishes so we all can compare

Made it just last night as Sunday dessert, couldn't wait to give my review. I read all the others, reviewed and read the recipe 2 or 3 times before I started. I even thought about doing the apple one. My Plum Cake Tatin was GREAT! My plums weren't soft or mushy...I bought firm plums with a little crunch. They baked up perfect (not sure if late July has anything to do with it, but the plums were on sale. I also sliced my plums like Ina did the Apple Cake Tatin (I wanted a slice of plum with each slice Husband LOVED IT. I had to stop myself. Took advice of other reviewer and cooked sugar until just beginning to look amber; not dark - I think that did make a difference and kept from burning as it baked in oven. Can't wait until peaches go on sale!

Great summer desert, i put canned peaches instead because i couldn't find plums. Watch out for that sugar on the stove..burns very quickly.

I read the reviews here before attempting this. That is why I tried to make sure that the plums were not too "juicy". When the whole thing came out of the oven it was obvious that it was too liquidy. I let it cool, hoping the liquid would somehow "solidify" a little into like a caramel glaze or something. When I turned it over, it was all mushy on the top. There was so much juice running everywhere. It was inedible. I scraped some of the mushy part off to see if I could at least taste what it would have tasted like. Very sweet. Maybe make it without so much of the sugar liquid? I don't think I'll try again. What a waste of food. Disappointed. :(
