My family loves these pancakes and ask for them each Christmas!!!
Easy to prepare and the presentation looks lovely with the creme fraiche and caviar - a sprig of dill too. Thanks Ina.

We love latkes for Christmas and I have been searching for Ina's recipe. I made it a couple of years ago and this year, my husband dropped a big hint--he would like s'more! These latkes are crispy, savory and thirsty for toppings. We'll be making s'more! Delicious. --MaggieVolk

I'm not a huge caviar fan, though. Too salty. I do like them with sour cream and chopped green onions, or homemade chunky cinnamon applesauce.
    Sooo good!

Seems like the Hampton experience has affected Ina at her roots. A simple yiddishe-style, unadulterated potato pancake recipe would have been more fitting with Hanukkah coming up. So the latkes don't absorb too much oil, go heavy on Matzo meal, only use a proportionally scant amount of flour, if you must go the flour route at all! And for goodness' sake, omit the creme fraiche and caviar, and stick to applesauce or better yet, sour cream. Ina, it's time you got off your cafe seat at the Champs Elysee and come on home! Don't over-gild the lily!!

My husband and I used this recipe for a holiday party and served them with caviar. We were very pleased with the results.

I made the pancakes for breakfast and served with sour cream only. No caviar. The pancakes were not too great. Very easy to make though.
