Wow! I was so excited to see that they turned out as well as they did, as I am the WORST baker in the world. I thought I'd have to go thru several batches to get them right, but they were great the first time. I was horrified to see that they softened overnight, so I'll put them in the oven to see if they crisp up again for dessert again tonight. Would like to know about how long they keep and how to store. Next time, I am going to shape the dough into eclairs and fill w/ her pastry cream.

I'm new to baking. The "dough" was too thin. Would leaving it in the food processor longer thicken it?

I've just knocked up 24 beautiful choux buns in 20 minutes including stacking the dishwasher!!!
Ina - yet again you've simplified and demistified a 'complex' recipe into something anyone can do! Thanks a million - Can't wait to eat them!!

I added tia maria (coffee liqour to the sauce. It was like adding the coffee, you couldn't tell it was there but gave it an added depth of flavour.
I used whipping cream to fill the profiteroles (with some tia maria.
Didn't use her recipe for profiteroles - I have a lot simpler one (and never seen that method before - don't need to dirty a food processor - wooden spoon and 2 mins does the trick!
Profiteroles are easy to make but it is a pain if you are making them for a crowd - so many batches. Make them if you have no more than 6 for dinner.

Profiteroles are one of the easiest things in the world to make. A good chocolate sauce can also be made with cocoa, water, sugar and vanilla, saving a few calories on the heavy cream.
