such a delicious soup. simple ingredients and easy to do. the pistou make a big difference when added to the soup.

This soup is absolutely delicious! I added the meat from a roasted chicken to it, yummy!

Really delicious and satisfying. Ended up using all the pistou in the soup-I like the more intense flavor although my husband wanted to spread it on some hearty bread.

This is so tasty & unique. Loved it! I did not have the saffron, so it's probably even better with it. I'll try to find it next time, but still wonderful without it. Note, you have to put the Pistou in it. It changes it completely & for the better!

First tasting was v blah! Admittedly, WF chick stock was weak, so I added a couple of packages of the condensed broth name brand is "Savory Choices". The SC broth line is like no other - WF used to carry it, but now have to order online. Anyway, I also added celery salt, Lemon zest of 1 lemon, dry Colonel Mustard and homemade croutons on top. Went to lengths to find the saffron, so had that too. All of the above added more depth. Next time will try the Pistou as so many compliments about that. When I got to the last cup of soup, I had many little bits of garlic, so next time will just crush and put in a cheesecloth bag.

I agree with many of the other reviewers- this soup is amazing. Alone, it's a tasty vegetable soup, but the pistou takes it to another level. It reminds me of my trip to southern France a few years ago- the flavors are fresh and authentic.
My only comment is that it is quite salty, and I did not use stock- just water. So taste as you go. Also, this recipe makes a TON of soup. Not a bad thing, but be warned!

Even though I didn't have all of the correct ingredients, the soup was delicious. I used a ham shank and made my soup base with it. Just another way if using up left-over ham from Easter.
