Wicked good!
I've made this at least 5 times & it disappears nearly immediately. The pistou is absolutely tremendous; I always make a little bit extra. I've made this for friends who are much better cooks than I & let's just say that I moved up a few notches in their book. Can't miss with this one, even if you try.

Outstanding!
Who knew vegetable soup could be so wonderful. If you are looking low cal, the soup without the pistou is very good, but add Pistou and it is a whole new level. I served it to 6 ladies and all had 2nds. The Pistou is also really wonderful just spread on bread. 75 5 star reviews tells you something.......

WONDERFUL! One of my favorite soups I've made thus far. Here's why:
1. It's easy to make...
2. It can be a meal (with some french baguette or an appetizer
3. It's inexpensive to make, and except for the saffron (which I happen to have, the ingredients are straightforward and easy to find.
4. The pistou infuses the soup with a wonderful, fresh and bold punch. For some reason this hearty soup still feels "light."
perfect for any season. I really like this. Excellent!

The best vegetable soup I have ever made-confirmed by all who tried it! I made a few substitutions because I was missing a couple ingredients, but the pistou finished this soup beautifully. This recipe is now in my permanent rotation. What a knockout Ina!

Ina, what a beautiful soup! It seems to have this very delicate flavor, yet is hearty enough to stand as it's own meal! And the Pistou was so good that we added it as a spread for our very crusty French bread.
When I watched you make it on the show, I didn't remember you adding the french green beans and the spaghetti, However, we did and it was excellent. We did cut the salt back to a teaspoon which seemed enough even for my husband, who is the king of salt. Every thing else was spot on!
I had to retire from a very productive and busy life several years ago with a very rare disease. I loved cooking and was known as a great cook all of my life. I was able to make this soup with only some assistance it was so easy. Thanks Ina for sharing your home, gardens and such great friends on your show!

This soup was absolutely delicious! I could not find saffron heads anywhere I looked, but it still turned out beautifully. The pistu was really great and I am going to use the leftovers on crunchy bread as an appetizer later this week; don't skip it!

Really liked this soup. I have not had great success with vegetable soups but this was great. If anything it was a little rich but I am not complaining. I am curious to see if it freezes (and defrosts well as I have an enormous pot.
