Great on a cold winter day! This is fantastic. Easy to make and ther pisou adds layers of complexity to the taste. Don't change anything and make this just as directed.

This is, by far, the best vegetable soup I have ever eaten. After eating this, I can't tolerate canned soup. The chopping takes a bit of time but it's good therapy and so worth every vegetable in it. I don't usually have the ingredients for the Pistou that Ina serves with the soup, but have never had anything but compliments when I share with my neighbors. I am called "The Soup Lady" because I live in a Senior Apartment community and when I hear that a friend is sick I always bring them soup. Thanks so much for this recipe.

Made this using the turkey carcass from Christmas dinner to make the stock. I used kale in place of haricots verts ... fabulous! The pistou adds so much, as does the saffron! Don't leave out the saffron! Served this to 12 women friends who are all great cooks/travelers/food lovers and it was a rousing success. Arugula salad with sliced Honey Crisp apples and blue cheese crumbles, fresh ground salt and pepper with light dressing of EVOO and white balsamic rounded this out nicely. I recommend this highly.

This was my first experience cooking with saffron or pistou so I didn't know what to expect. I was pleasantly surprised with the outcome. My husband couldn't put his finger on what was going on with the soup, but that was no surprise because these were new flavors to him too. I think I enjoyed it more than he did, but I also think his biggest concern was that it didn't have any meat in it.

Great recipe! I didn't have beans, nor care much for them, so added baby spinach at the end when you add the pasta. Good that way, I thought.

It's soup time here in New England, and this is the first soup I thought of making. It's flavors are superb, so complex, and delicious. With a little crusty bread a perfect meal. Thanks Ina, it's my favorite all time soup!
