    I was looking for vegetable soup that didn't any tomatoes. This recipe is full of flavor, thick and hardy, even though I tweaked it a bit. I didn't have saffron, and I didn't make the pistou because I thought it may be too rich for the soft diet I was on for medical reasons. The soup is thick, savory, healthy and quite filling, especially with fresh, crusty bread. This is great comfort food and very soon when I make it again, I'll make the pistou for flavor and richness and serve it to friends for dinner with the crusty bread, a hardy wine and chocolate dessert!

    This is full of flavor and so good for you! I've also made it sans potatoes and pasta (doubled up on the other vegetables for a more low-carb meal, and it's still fantastic.

    Other vegetables, namely zucchini, are wonderful in this. Just be careful not to add them until close to when you're ready to dish the soup out, because the zucchini can get soggy.

    I was looking for a healthy soup to put in the freezer for the winter. This did the trick! The pistou is totally important to the flavor of the soup. I didn't use any of the leftover in my soup but am looking forward to adding it to something else. I doubled the reciepe but did not double the saffron. I find the flavor strong and thought it was terrific was just the single amount. Looking forward to a snowy NY winter day to take this out!

    This was, hands down, the best vegetable soup I've ever had (not counting my grandma's famous recipe. It was perfectly balanced, and I have to say, the saffron made it top-notch. This was a definite make-again...I'd even make for guests on a cool fall evening. HIGHLY recommended!!

    I made this to help me along with a summer cold and it was incredible. The flavors were clean, defined, it presented beautifully, and was enjoyed by my entire family. We served with the parm, pistou and a dollop of creme fraiche, along with a crusty freshly made loaf of bread straight out of the oven. Ultimate in comforting foods.

    This was the best vegetable soup my husband and I have ever had! The Pistou added so much flavor and I also added some pre-cooked chicken at the end for protein. Good job Ina.

    This was good, but it was too salty for mine and my husband's tastes. The next time I make this, I will put in alot less salt. Otherwise it was great; the Pistou really added a little extra something. I served it with Ciabatta bread. Only thing I couldn't find was Saffron; I wonder how much a difference this would have made. What I love about this soup is the aroma it leaves in the house. This is a great all year round soup; I think that even in Summer it would be good. Prep took longer than I thought; I am not handy with a knife, so I had to take my time with it. Next time, I will chop the ingredients the night before or something. This is a filling soup, but not heavy.

    This is what I call a perfect soup-easy to make, tasty and savory, and full of healthy veggies. I will make this again and again. I think I have found my favorite soup recipe of all time!
