Holy cow! These cookies are to die for. I am not a fan of oatmeal cookies, let alone raisins in them. I made these for the hubby, but had to try one. I am in oatmeal heaven right now! This is a super simple recipe, and extremely delicious! Thank you Ina! This will go into my book of all time favorite recipes. Gotta go! I have another cookie callin' me. :

I made Ina's fabulous cookies and can't lay off of them. I substituted dried cranberries and dried currants instead of raisins. My family does not like raisins and I had the other dried fruit. They are simply the best!

I just made these cookies and they are soooooooooooo good! I replaced the raisins and walnuts with dark chocoalte chips and dried cherries and the substitution is a huge hit. The base recipe is the best cookie I've ever made.

To , Lynn just make sure you don't over bake the cookies. I have also used a slice of bread to help in the container or cookie jar to keep moist if too hard. you would just need to change the bread out as needed ,it will dry out after a day or so so if these were a batch you were having at home, give it a try. Good Luck.

Does anyone know how to keep these moist till the next day - I know oat meal cookies sometimes get a little dry. I noticed someone commented that they did dry out. Any advice? Its a little scary making them for someone's wedding this week - but I want to wait till the night before.

Earlier this week I made a comment on a different oatmeal cookie recipe (The Neely's, saying that I had finally found the perfect oatmeal cookie recipe, I WAS WRONG! Barefoot Contessa puts the Neely"s recipe to shame. THIS is the best recipe for oatmeal cookies! moist, delicious AWESOME!!!!!

The flavors in these cookies are really good. They are crunchy and chewy when they come out of the oven, however overnight they dried out a little too much and were too crunchy, although perfect for my coffee - like a softer version of biscotti.
I packed and stored the cookies in an airtight container so I'm not sure when they became so dry, except that perhaps it is because I used large eggs and not the extra large eggs that Ina called for.
