    I WAS DISAPPOINTED. MY FIRST PATCHED OVER COOKED. 25- 30 MINS??? I THOUGHT THAT WAS WAY TO MUCH TIME IN THE OVEN, SO I CUT MY TIME DOWN TO 23 MINUTES. VERY DRY. NEXT PATCH- I CUT DOWN TO 15 MINUTES. I CHECKED EVERY MINUTE UNTIL MY TOOTHPICK CAME OUT DRY. STILL TO DRY FOR MY TASTE. I'M A BAKER, AND A REAL FOODY. I THINK IT MIGHT HAVE BEEN THE BUTTER VERSES THE OIL. DON'T THINK I'LL USE THIS RECIPE AGAIN. SORRY.

    These muffins are so light ! Not too sweet and full of flavour, mine weren't as red as Ians but still great. With icing I only used 2 cups of icing sugar for me it was more than enough and then piped them on, superb icing and muffins !!

    Love Ina, but these cupcakes turned out very dry. No, I did not overbake. Don't waste your money and time making these dry and tasteless cupcakes. Try another recipe.

    I love everything Ina Garten and all of her recipes I have tried have been successful to this point. Unfortunately, I cannot say the same for these cupcakes. I heeded the warning of other reviewers and watched the cupcakes to ensure they did not overbake however, they still came out rather dry and were extremly dense to the point I rechecked every ingredient to ensure I added the right things. As red velvet cupcakes are a specialty of mine, I've made them a millions times before but using Paula Deens receipe (cutting the oil in those quit a bit and have never had any problems. These cupcakes baked to a dark "almost couldn't tell they were red" red. The icing was delicious although it didn't help with the rather non descript taste of the cupcakes. Perhaps my cupcakes were just a one off but I don't think I'll use this recipe again.

    I made thse yesterday and make 12 jumbo cupcakes instead of the 12. The taste was good but could have been moister, but the color was not very "red" inspite of the tablespoon of red food coloring. I used 1 stick of butter and 2 1/2 cups of powdered sugar instead of the amount specified and it was quite enough...
    I am not sure I would use this recipe again, but try for a better overall result.

    Cupcakes were great! Made them for my mom for her Halloween birthday. She loved them and so did my husband. I tried Paula Deen's recipe before, but the cakes were too oily. These are much better. I did heed the warnings of the prior reviews and checked the cupcakes after 15 minutes of baking. I ended up with a baking time of 20 minutes. Also, I did not put all 2 1/2 cups of powdered sugar into the icing mixture. I only added 2 cups and it was not overly sweet. I have loved each and every one of Ina Garten's recipes that I have tried. Thanks Ina!!
