    @kelleejr.... I used hersheys and did just fine. They definitely do not need 30 minutes, so try again and check them at 15, 20 etc...

    These are a big hit in my fam...even my huge baker fans cannot believe how good this icing is!

    I can see how these would be really great cupcakes but mine didn't turn out so great. They lacked flavor and tasted more like muffins. Ina recommended a special type of unsweetened cocoa which my grocer didn't have so I ended up using Hershey's. I think this is where I went wrong. I guess the moral of the story is if it's recommended you should probably use it, or not make the recipe at all.

    These cupcakes came out perfect! I read the comments and only baked them for 15 minutes and they were just right. Everyone loved them and i'll be making them again for my brother's birthday later this week! Ina's recipes never disappoint!

    Whenever I make red velvet cake my layers are always so heavy. Her recipe with the vinegar against baking soda makes soooooo much sense! I cant wait to make it again just to see the results!

    I know a lot of people have said this recipe was very dry but I have to say mine turned out to be perfect. After about 10-15 minutes they looked cooked to me so I checked them with a cocktail stick and they were. Perhaps the 25-30 minute cooking time is the problem. I brought some into work, as did my husband, and everyone loved them so it wasn't just me. The icing is one of the best I've ever used and the cakes were rich, moist and delicious. I've tried a few of Ina's recipes now and I have yet to find one that hasn't worked out wonderfully

    The cream cheese frosting is a bit too sweet, in the future I would start with 2 3/4 c. sifted confectioners sugar then add to your taste. And yes, I did sift before I measured.

    These cupcakes came out big and beautiful. And not only were they easy to make, but surprisingly easy to clean up! I don't know why they came out dry for others but mine were fabulous and moist. It might be due to over-cooking just a tad... they cooked faster than I thought, which caused the top rim to be a little crispy. I don't think they took quite as long as the 30 min called for in the recipe but just keep an eye on them, or better yet, your nose. Once you start to smell the chocolate, they're done - or very close to it. I loved them - I can always trust Ina!

    I made these last night and as all the other reviews said they are a little on the dry side and not as moist as i would have liked them to be.
