FANTASTIC!!! Not much of a cream cheese frosting fan, so instead I whipped up some of Ina's chocolate ganache, and dipped those babies right in that. HOLY SMOKES, WAS THAT A GOOD CUPCAKE!

I hate to give a Barefoot Contessa recipe a bad rating, because I absolutely LOVE all of her recipes, but these cupcakes were a disappointment. They came out dry, and just lacked that yummy "red velvet" flavor...tasted more like plain chocolate, and weren't even that red!

The first time I made these, my son said they were not sweet enough. The next time, I added 1/4 cup more sugar. They were perfect. Everyone loved them. I've made them so often when I went on a trip with my sister, I made a batch without the receipt and amazed the whole group. Made me feel like a professional.

Not too crazy about this recipe. Expected better from the Contessa. The cake itself came out dry and was just "OK" in flavor. The frosting...oh boy...way too buttery for my liking. I gave the cake recipe two stars but I give the frosting recipe one star.

I tried this recipe twice. The first time, I followed the instructions and it came out a tad dry. The second time, I baked them for 18 minutes and they came out PERFECT and very moist. Everyone loved them.

I made these for my daughter's birthday and I couldn't finish 1 of them. Had to throw them all out and find another recipe. So DRY and did I mention DRY? I am surprised as Ina has such wonderful recipes. The cooking time might have been the culprit.

I baked mine for 18 min. and they turned out really moist. I brought them to a family get together and everyone loved them!

Much too dry. I am not a big chocolate fan but have seen people raving about red velvet so I thought I'd give these a try. Can't really turn down something with cream cheese frosting but next time I will make carrot cake or pumpkin instead.

Well, I should have read the reviews before I baked these. My gut instinct said to bake for 20 minutes, so that's what I did. Should have gone less. Good flavor, though.
