The ease of this recipe is the only reason that it gets 2 stars. I followed the recipe exactly and the hollandaise was so salty and sour (from the lemon juice that it couldn't be eaten. I added more egg yolks and butter which helped..some. I suggest using 1/4 of what is suggested in salt and lemon juice.

Ina thank for sharing this. I made this tonight. I have always roasted my veggies better them boiling them. BTW just a little share here next time you buy your asparagus and its big (over grown. Try steaming them for about 10 minutes then roast makes a big difference. I also roast my veggies for my roast to in the crock pot. Any ways I only used 2 tablespoon of lemon and a pinch of kosher salt. I did add some white pepper. I am having it for breakfast for what else eggs benedict. I will be layering it with left overs. Sliced potatoe (instead of English Muffin, nice sliced ham, asparagus, egg and topped with Ina's Hollandaise sauce.

The hollandaise sauce was fabulous and so very easy! I overroasted my asparagus but it was still quite tasty with the sauce on it! It may not have been traditional sauce, but it worked just great. Ina is just great!

Bottom line: if you are looking for a REAL, TRADITIONAL HOLLANDAISE sauce then this is NOT it. Hollandaise isn't the simplest of tasks...the more you do it the easier it will get. Taking these kinds of short cuts will get you undesirable results. Stick with a traditional recipe using CLARIFIED BUTTER instead of melted down butter.

    p.s.
    Ina, you forgot the vinegar.

I thought this hollandaise recipe was fantastic! Easy and not salty at all (as some people have said, if you use the kosher salt. I had made hollandaise in the past and it wasn't good, this was surprisingly easy and quick and perfectly seasoned!

Great recipe and super simple to make, just be sure not to over blend, or you may end up with mayo.
