    I have "roasted berries" ever since I saw Ina do this on the show. The first time I used the whole assortment of berries which can be somewhat pricey and I roasted them in a roasting pan per others suggestions. I have never thought about roasting berries but it truly is easy and does not take much time. I now sometimes just use strawberries and/or blueberries or whatever is on "special" at the supermarket.
    I have served them over angel food cake, pound cake, and over ice cream and then I sometimes put a dollop of whipped cream on top.

    This was the most easiest deserts ever to make. It came out perfect. My whole family loved it so much I had to make more. If you're wondering where to get the vanilla bean at go to the spice section and look for Madagascar Vanilla Bean. It'll be in bottle and comes with 2 beans.

    I didn't have raspberries or blackberries, so I sub'ed more strawberries and blueberries. The flavor was wonderful! I even used a casserole dish because of the other reviews saying that it boiled over, and it still boiled over...

    I haven't tried this yet, but I see a lot of questions about where to get vanilla beans......COSTCO!! They have a lot there!

    I tossed my berries with Zeron vanilla and omitted the sugar. It came out super-duper! I may never eat raw berries again.

    I couldn't find a vanilla bean, either, so used a capful of vaniilla extract. I also would advise using a roaster pan, because the berries really boiled up.
    I served with pound cake and shortcakes and it was delicious.

    the berries totally boiled over and made a mess of my oven after only 10 minutes! Was this because I rinsed (and air dried the berries first and they retained the moisture? I noticed on Ina's Pavlova recipe (from "Jeffrey's Birthday" that she used the strawberries, blueberries, and raspberries, all straight from the plastic containers. (In the recent "Turn up the Volume" episode the Vinaigrette for Green Salad recipe she prepared, she specifically mentioned using pre-washed mesculun mix for the greens, however.

    I don't care for meringues so I served my roasted berries over homemade pound cake sliced and topped it with whipped cream. It was fabulous, and the berry juices that soaked into the cake made it even tastier. This recipe is definitely a keeper!! Can't wait for the fresh summer berries!!

    I made the berries for a quick weeknight dessert. And I cheated; I used frozen berries & started them in a cold oven. They held up well after the 20 minutes. I topped them with a mixture of cream, mascarpone, honey, & freshly grated nutmeg which upped the luxury factor. Tomorrow, they'll probably end up on waffles or topped with yogurt. Versatile, simple, and slightly unexpected . . .exactly what you expect from Ina.
