These were great. I have a neglected can of bacon drippings in my freezer that seemed to want to stand in for the olive oil. I preheated my oven with a large cast iron on the middle rack. Once it came to temp I pulled out the pan, took a chunk of frozen drippings and threw it in. Once that melted I tossed the sprouts all around right in the pan and back into the oven it went.
I can't recommend this whole roasting veggies thing enough. If you think you don't like Brussels sprouts but are open to the idea that maybe you just haven't experienced them correctly yet: try this recipe.

This was the first time I have made brussel pprouts and I can not imagine them being better any other way! My mother has only had boiled brussel sprouts and thought she would not care for these. We set around eating them straight out of the oven like an app...this has definantly changed my mind about brussel sprouts. I will be using this recipe for the Thanksgiving & Christmas holidays coming up. Thank you

Brussel Sprout lover from this recipe! I don't think I can make them any way else. I actually crave them sometimes and make a meal out of them!

I like to layer little lardons of bacon over the sprouts. It gives a crunchy texture as it bastes the sprouts whilst cooking. Deglazing the roasting pan with red wine vinegar adds a nice sauce also.

AMAZING! A little twist on a little twist from another review. In addition to a little brown sugar for added crunch, sprinkle crisp bacon bits on top. I toss the sprouts in some of the grease from cooking the bacon and a little olive oil for baking, same time and temp as Ina's recipe. Also yummy.

I'm so glad you put this online. I love roasted vegetables but never thought of doing this with brussel sprouts. I only had 10 - 12 brussel sprouts but I stirred them in a little olive oil and very generously sprinkled them with sea salt. Since their were only a few in the pan they browned really well -- absolutely fantastic! Thanks, again!

Another great recipe from Ina. If you want to add a little twist, sprinkle some brown sugar on the sprouts and it adds a nice sweet crunch!
